Cookie Dough Ice Cream Sandwiches are perfect for summer! Add vanilla ice cream between two layers of homemade chocolate chip cookie dough to make this delicious no-bake dessert.
It is no secret that I love cookie dough. The only thing better than cookie dough is cookie dough with ice cream. With only 20 minutes of prep time, you can make a batch of these delicious ice cream sandwiches to freeze.
Summer is here and it is already so hot. It’s hard to want to turn on the oven, even for dessert. Luckily, this recipe doesn’t require any baking. And nothing beats a frozen dessert when those temps are in the triple digits!🥵
Ingredients in Cookie Dough Ice Cream Sandwiches
Flour – Since you aren’t baking the cookie dough, you need to make sure to heat-treat the flour to kill any bacteria that may be present. You can either heat the flour in the oven or the microwave (directions can be found below).
Butter – For best results, use real butter. Melt the butter before adding to the other ingredients.
Sugars – You will need brown sugar and granulated sugar. For best results, make sure the brown sugar is soft and fresh.
Milk – A little bit of milk adds the needed moisture to the dough. Any type of milk will work, even non-dairy alternatives.
Mini chocolate chips – I prefer to use mini chocolate chips, but you can use regular semi-sweet chocolate chips if you’d like.
Vanilla ice cream – The recipe calls for vanilla ice cream, but you can use any flavor you’d like. The ice cream is much easier to work with if it is a little bit soft when you layer it on top of the cookie dough. Just make sure it isn’t too melty!
How to make Cookie Dough Ice Cream Sandwiches
MAKE THE DOUGH
In a large bowl using an electric mixer combine the melted butter, white sugar, brown sugar, and milk until combined.
Next stir in the flour and mini chocolate chips.
ASSEMBLE THE ICE CREAM SANDWICHES
Line a 9×9 square baking dish with parchment paper.
Spoon half of the cookie dough mixture into the pan and spread out evenly.
Carefully lift the parchment paper with the dough on it and set it aside.
Place another sheet of parchment paper in the baking dish and spread the rest of the dough into the pan.
Gently spread the softened ice cream onto the dough in the dish and spread evenly.
Next carefully invert the parchment with the dough on it from earlier on top of the ice cream.
FREEZE AND SERVE
Place in the freezer for 8 hours or overnight. Slice and serve!
*You can heat treat your flour by placing it in a small bowl and microwaving it in 30-second increments, stirring between each, until the center of the flour registers 160°F.

- 3 cups vanilla ice cream softened (or you can use whatever kind of ice cream you’d like!)

How long can you store Cookie Dough Ice Cream Sandwiches?
These never last very long in my house, but you can store them in the freezer for up to 30 days in an airtight container.
HOW TO HEAT TREAT FLOUR
Raw flour has the potential to contain harmful bacteria, so it is important to heat treat it to make sure all bacteria are killed before consuming. You can heat treat flour in the oven or in the microwave – both methods work great!
IN THE OVEN
Line a cookie sheet with parchment paper and spread the flour in a thin layer on the parchment paper. Bake at 300° for about 5-6 minutes. The flour needs to be at a temperature of 160° to be safe. Use a meat thermometer to check and if the temperature isn’t high enough, cook for another 1-2 minutes before checking again.
IN THE MICROWAVE
You can easily heat-treat flour in the microwave as well. This works great if you don’t need to treat more than 2-3 cups at a time. Place the flour in a large, microwaveable bowl and microwave in 30-second intervals until the temperature reaches 160°. Stir between intervals to make sure the flour heats evenly. You will probably need to heat the flour for about 2-3 minutes in total.
Once the flour is ready, let it cool. Use immediately in a recipe or store in an airtight container until ready to use.
