MAKE THE DOUGH

  • In a large bowl using an electric mixer combine the melted butter, white sugar, brown sugar, and milk until combined.
  • Next stir in the flour and mini chocolate chips.

ASSEMBLE THE ICE CREAM SANDWICHES

  • Line a 9x9 square baking dish with parchment paper.
  • Spoon half of the cookie dough mixture into the pan and spread out evenly.
  • Carefully lift the parchment paper with the dough on it and set it aside.
  • Place another sheet of parchment paper in the baking dish and spread the rest of the dough into the pan.
  • Gently spread the softened ice cream onto the dough in the dish and spread evenly.
  • Next carefully invert the parchment with the dough on it from earlier on top of the ice cream.

FREEZE AND SERVE

  • Place in the freezer for 8 hours or overnight. Slice and serve!

Notes

*You can heat treat your flour by placing it in a small bowl and microwaving it in 30-second increments, stirring between each, until the center of the flour registers 160°F.
