This cherry cheesecake recipe is perfect for sharing with others and so easy to make that you’ll jump at the chance to bring sweets to the party. Can never have too many sweets, right?
What is Cherry lush?
This perfect no-bake dessert is great any time of the year. The graham cracker crust is layered with a cream cheese filling and a cherry pie filling, then topped with another cream cheese layer. Sprinkle a little graham crackers over the top to finish it out for an easy dessert.
Ingredients for cherry cheesecake lush
-Graham Crackers: You will need 1 ½ cups of graham cracker crumbs (any brand.) This is about what you’ll get from one sleeve of graham crackers.
-Butter: To make the crust you will need 6 tablespoons of melted butter or margarine.
-Cream Cheese: One 8 ounce package of softened cream cheese will make a rich-tasting layer but I recommend sticking with the regular version as the low-fat one can make the dessert watery.
-Sugar: Use ½ cup of granulated sugar or powdered sugar to sweeten our dessert.
-Vanilla: Add 1 teaspoon of vanilla extract to help add in some delicious flavor.
-Cool Whip: You’ll need an 8-ounce tub of whipped topping or you can DIY your own whipped cream and use that instead.
-Cherry Pie Filling: You will need one 21 ounce can of cherry pie filling to give our dessert the red berries we desire.
How to Make No-Bake Cherry Lush Dessert
Spray a 9×9 baking dish with nonstick cooking spray.
In a small bowl, mix together the graham crackers and butter. Reserve 2 tablespoons of the mixture for the topping.
Press your graham crackers into the bottom of the baking dish. Press flat.
In a bowl, cream together the cream cheese, sugar, and vanilla until light and fluffy.
Fold in the Cool Whip with a spatula, do not over mix.
Spread half of the cream cheese mixture over the top of the crust.
Pour the can of pie filling over the top of the cream cheese.
Spoon the remaining cream cheese mixture over the cherry pie filling, gently smoothing it out as you go.
Sprinkle the top with the reserved graham cracker crumbs.
Slice and serve. Enjoy!
CAN YOU REPLACE THE COOL WHIP?
Cool Whip is the best “whipped topping” to use in this recipe. However, if you can’t find Cool Whip where you live or you prefer not to use it in recipes, you can use stabilized whipped cream instead. If you just use regular whipped cream, the consistency will be too light and the cream will not hold up very well. It’s very simple to make your own stabilized whipped cream and it just takes a few minutes!
HOW DO YOU MAKE STABILIZED WHIPPED CREAM?
If you want to make whipped cream ahead of time, you can, but you have to stabilize it. To make stabilized whipped cream, you will need the following ingredients:
- 4 ounces of cream cheese (softened to room temperature)
- 1/3 cup powdered sugar
- 1 tsp vanilla
- 1 cup heavy whipping cream
Beat the whipping cream just until soft peaks form.
Add in the cream cheese, powdered sugar and vanilla. Whip on high until mixture is smooth.
Store in the refrigerator until ready to use, up to 3 days.
A little tip for making whipped cream faster: use a metal bowl and place the bowl in the freezer for about 30 minutes before you make the whipped cream. This will significantly decrease the amount of time that you will need to beat the whipped cream – the process will go much faster!
No-Bake Cherry Lush Dessert
Ingredients
- 1 ½ cups graham cracker crumbs about 1 package graham crackers
- 6 Tablespoons butter melted
- 8 ounce cream cheese softened
- ½ cup granulated sugar
- 1 teaspoon vanilla
- 8 ounce Whipped Topping
- 21 ounce cherry pie filling
Instructions
- Spray a 9×9 inch pan with nonstick cooking spray.
- Mix the graham crackers together with the butter in a small bowl. Reserve 2 tablespoons for the top.
- Press the graham crackers into the bottom of the pan. I like to use a flat measuring cup to press it down good.
- Using a hand mixer, mix the cream cheese, sugar and vanilla together until light and fluffy.
- Fold the cool whip into the cream cheese with a spatula. Don’t overmix.
- Spread half of the cream cheese mixture over the crust. Then pour the can of pie filling over the cream cheese.
- Lastly, spoon remaining cream cheese over the pie filling, gently smoothing it out.
- Sprinkle with a couple tablespoons of the graham cracker crumbs & serve.
