Cinnamon Toast Crunch Crumb Cake is absolutely delicious and so easy to make using a boxed cake mix. Soft, moist cake recipe covered with a crunchy cinnamon topping.
Cake mixes are so convenient and easy to make, but I usually like to add something to them to make them even better! If you haven’t tried the Betty Crocker Cinnamon Toast Crunch cake mix, you need to check it out. The cinnamon flavor is amazing. I’m not a big frosting person, so I love this recipe because you don’t need frosting for this cake!
CINNAMON TOAST CRUNCH CRUMB CAKE
This delicious cake starts with a Cinnamon Toast Crunch cake mix, made according to package instructions. A simple streusel is made with butter, cinnamon, sugar and flour and then sprinkled over the cake when it is halfway done baking. Adding some crushed Cinnamon Toast Crunch cereal to the top adds some crunch and even more cinnamon flavor. You can add a simple powdered sugar glaze if you want, but the cake is amazing even without it!
INGREDIENTS IN CINNAMON TOAST CRUNCH CRUMB CAKE
CAKE:
Betty Crocker Cinnamon Toast Crunch cake mix – This cake mix pairs perfectly with the cinnamon crumb topping on top. I have been able to find this cake mix in most grocery stores, but you have trouble finding it, you can use a white cake mix instead. Just add 2 teaspoons of cinnamon into the batter.
Water – You will need a cup of water to mix with the cake mix. You can use milk instead if you want a richer flavor.
Oil – The cake mix calls for 1/2 cup of vegetable or canola oil. I often swap this out with coconut oil, or you can even use 1/2 cup of melted butter if you prefer.
Eggs – The cake mix calls for 3 eggs.
TOPPING:
Butter – Yes, that’s two sticks of salted butter necessary for the crumb topping. You will want the butter to be just very slightly softened. Just let the butter sit out for about 15-20 minutes before adding to the other ingredients.
Flour – You will need 2 cups of all purpose flour to mix into the streusel topping.
Sugar – A cup of sugar will sweeten up the crumbly topping for the cake.
Cinnamon – A tablespoon of cinnamon adds the perfect amount of cinnamon flavor to the crumb topping.
Cinnamon Toast Crunch cereal – The recipe calls for 1/2 cup of crushed Cinnamon Toast Crunch cereal. You can definitely add a little bit of extra if you’d like. Just make sure not to crush the cereal too finely; you will want large crumbs to add crunch to the cake.
GLAZE(optional):
Powdered sugar – You only need ½ cup of powdered sugar to make a simple glaze for the cake. If you want a little bit more glaze, you can double or even triple the glaze recipe.
Milk – You will add about 1-2 tablespoons of milk to the powdered sugar to make the glaze. Add a little bit more to thin the glaze to the perfect consistency.
HOW TO MAKE CINNAMON TOAST CRUNCH CRUMB CAKE
Preheat oven to 325° F. Line a 9×13 pan with parchment paper and lightly spray with cooking spray.
Prepare the cake mix per box instructions, making sure not to overmix. Then add to parchment paper lined pan and bake for 20 minutes.
While the cake bakes, prepare the crumb topping but do not mix in the cereal. Use a standing or handheld mixer to combine the softened butter, flour, sugar, and cinnamon. Do not overmix, you want large crumbs.
Sprinkle the topping evenly over the cake, breaking apart any overly large chunks. Then sprinkle the cereal crumbs on top and bake for another 20 minutes.
Remove from the oven and let cool completely on a wire rack before cutting.
As it cools, prepare the glaze by mixing ingredients together in a small bowl.
When ready to serve, drizzle with the glaze and cut into squares.

TIPS FOR MAKING THE BEST CINNAMON CRUMB CAKE:
- Make sure butter is just slightly softened for the topping, not room temperature and not melted. It needs to be easy to work with. If it is too hard then the crumb mixture will be too dry and fall apart. If it is melted then the crumb topping will be too gooey.
- Different baking pans will require different baking temperatures and baking times, so be sure to follow the box instructions and adjust accordingly.
- Baking with parchment paper makes for easy removal but the cake can also be baked right in the pan. Make sure it is greased with butter or cooking spray so it does not stick.
- I experimented and found that if you place the crumb mixture on top of the cake batter from the beginning, the cake does not bake as evenly. The center sunk in a bit and the cereal was overdone. For a more even cake, first bake the cake for 20 minutes before adding the crumb topping. Then bake again for another 20 minutes.
HOW TO MAKE A BOXED CAKE MIX TASTE BETTER
This cake is delicious even when made just as the box suggests, but there are a few tricks you can try to make cake mixes even better! You can use any or all of the following ideas:
- Replace the oil in the recipe with real butter. Melt the butter before adding to the mix.
- Replace the water in the recipe with milk instead.
- Add one (or two) more eggs than the box calls for.
- Add 1 small box of vanilla pudding mix to the cake batter. This does make the cake a little more dense, but the flavor is incredible.
HOW LONG IS CINNAMON CRUMB CAKE GOOD FOR?
