We’re having a warm start to Fall here in Utah, which means the tomatoes from my garden are still growing abundantly. It’s wonderful! This Chicken Caprese is a variation on a family favorite. I love how simple it is to make. The dish has incredible flavor and I adore the fresh taste. It’s easy enough for a weeknight dinner but the end product is so gorgeous, it could easily be for guests.

Chicken Caprese
Serves 4 in about 40 minutes
- 3 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 2 TBSP balsamic vinegar
- 2 tsp minced garlic
- 1 TBSP lemon juice
- 2 tsp cornstarch*
- 1 tsp Italian Seasoning
- 1/4 cup fresh mozzarella pieces
- 1/4 cup finely chopped fresh basil
- 1/2 cup diced tomatoes
- 4 cups cooked linguine, drizzled with olive oil
- salt & pepper to taste
Slice thawed NatureRaised Farms® chicken breasts into smaller pieces if preferred. I like to just halve mine so that the chicken cooks faster and it’s easier to dish out portions to my kids.
Combine olive oil, vinegar, garlic, lemon juice, cornstarch and Italian Seasoning in a freezer bag. Add chicken and marinate for 20 minutes.
Saute chicken in the marinate on medium heat for 5-8 minutes per side, depending on the size of your chicken breasts. A meat thermometer should register 165 degrees F. Remove from heat and set atop linguine. Dot chicken and pasta with fresh mozzarella and tomatoes. Sprinkle basil on top. Serve immediately.
*The cornstarch in the marinade is optional, but I encourage you to try it. Cornstarch is often used in Asian dishes to give the chicken a protective coating that locks in juices and flavor during cooking. I’ve found it’s an easy way to create tender, flavorful chicken!
