Easy Zucchini pasta is light, summer pasta made with fresh zucchini, onion, garlic, sausage, Parmesan cheese & pasta of course! Easy summer dinner that comes together fast and uses garden zucchini!
Finding summer pasta recipes with zucchini isn’t always easy, but this one is no doubt a winner in my book. With the flavors being so great as-is, there’s no need for a heavy sauce. This angel hair, sausage, and zucchini recipe is one that you’ll want to bring out over and over again this summer.
Making this Zucchini Pasta
You’re going to love how fast and easy to prepare this dish is to make. It can be finished in about 30 minutes or less, making it perfect for when you don’t want to stand in front of a hot stove for too long!
Making this angel hair pasta recipe is as simple as cooking everything and mixing it together. Warming up the veggies and sausage before combining and then tossing them in with cooked and drained pasta. While it may take a few minutes to do, it’s nice having such a simple dinner dish now and then.
Can I Use a Different Cheese?
While I like using Parmesan cheese for this recipe I have heard some great feedback from people who tried it with Feta cheese! That sounds like a great way to amp up the summertime vibe (Feta just sounds like a summertime cheese, doesn’t it?) You can also use an Italian Blend cheese, or smoked gouda.
Do I Have to Use Angel Hair Pasta?
Nope! You can use any noodle that you prefer or that you have on hand. I personally like angel hair because it cooks the fastest and looks especially nice with this recipe, but you can use anything from Linguine or Fettuccine to Spaghetti or Rotini. Use what you have and what you like!
Easy Zucchini Pasta Ingredients
-1/2 box Angel Hair pasta: You can also use thin spaghetti if you prefer. You’ll need 4 oz, although if you need to double it, you can!
-1 medium- large zucchini: I like garden zucchini best, but you can use store bought as well!
-1 medium red onion: Slice it or chop it smaller, depending on your personal preferences.
– – Garlic: I add 2 tsp minced garlic to add some great flavor to this dish.
-1 package smoked or Kielbasa sausage: USe 12 oz of any type of sausage that you like! Just keep in mind, if the sausage is not sold pre-cooked, you’ll need to allow about 10 more minutes for the sausage to cook.
-1/2 cup shredded Parmesan cheese: Don’t you just love Parmesan cheese?! This adds some great flavor to this light, summer pasta.

How to Make Easy Zucchini Pasta
Slice the zucchini and red onion, set aside.
Before cooking the vegetables, you’ll want to start cooking the sausage. Depending on what kind you get, it might take 10-12 minutes to cook, so you’ll want to cook both the sausage and the vegetables simultaneously so they are both done around the same time.
If you grill the sausage like I did, then grill it for about 10 minutes, let it sit for about 2-3 minutes, before slicing. If you’re cooking it on the stove, slice, then saute it in the pan (this might be the quicker method).
To cook the vegetables, heat about 2 TBSP olive oil in a saute pan on the stove. Add in the zucchini and then cook for about 5 minutes. Add in the onion and cook for another 5 minutes. I take my vegetables off the stove when I see they’re almost done, because they cook a bit more even after removing from the heat. {I don’t like mushy veggies!} Toss in the sliced sausage and stir so that the flavors begin to combine.
Cook your pasta according to it’s package directions. Angel hair pasta normally only takes 5-6 minutes to cook, so I usually heat the water when I start cooking the zucchini. The pasta is ready to go in at about the time I begin cooking the onions. Everything is done at the same time!
Drain the pasta and drizzle with olive oil. Serve your pasta topped with the zucchini/sausage mixture. Sprinkle the top with Parmesan cheese.
Easy Zucchini Pasta
Ingredients
- 4 oz Angel Hair Pasta
- 1 med Zucchini
- 1 med Red Onion thinly sliced/ diced
- 2 tsp minced garlic
- 12 oz Smoked Sausage sliced & halved
- ½ cup Parmesan Cheese
- Olive Oil
Instructions
- Slice the zucchini and red onion. Set aside.
- Slice and halve the sausage. Transfer to a hot saute pan and cook for about 5-7 minutes, stirring often. (Alternately, you can grill the sausage if you prefer! Just grill it whole, then slice it after it's cooked.) Set aside.
- To cook the vegetables, heat about 2 TBSP olive oil in a saute pan on the stove. Add zucchini and cook for about 3-4 minutes. Add onion and garlic, cook another 3-4 minutes. I take my vegetables off the stove when I see they're almost done, being as they cook a bit more even after removing from the heat. Combine the sliced sausage & vegetables, so that the flavors begin to combine.

Why does this pasta have no sauce?
It’s simply not needed! The sausage, onion, garlic & Parmesan meld and give this pasta a light flavor that I crave in the summertime. If you’d like to add more flavor, you can add some charred grape tomatoes, or even diced canned tomatoes. The type of sausage you use lends to the flavor as well, so keep that in mind when making a choice! I just use a basic smoked sausage. You can use smoked turkey sausage as well, for fewer calories!
How long does Zucchini Pasta keep for?
This dish makes great leftovers! It will keep for about 4-5 days in the fridge. I’m not a fan of freezing zucchini or pasta as they both tend to defrost and go mushy.
