Oven Fried Zucchini is a simple 3 ingredient side dish (or appetizer) that is healthy and delicious. What makes it even better is that it hardly takes any effort or time to make- doesn’t that sound incredible?
Finding zucchini recipes becomes a hobby of mine during the summer when my garden explodes with fresh produce and sometimes I find simple recipe gems like these baked zucchini chips to make it all worth it. Making oven fried zucchini rounds has become one of my favorite ways to use up the fresh zucchini we’ve got growing around here.
Tips for Making Oven Fried Zucchini with Panko
First of all, if you haven’t tried Panko, I highly recommend it. It’s a delicious breading (Japanese breadcrumbs) that you can find just about anywhere and because they deliver a great crunch without imposing unwanted flavors on your food you can enjoy your dish and use any seasonings that YOU want. You can, of course, choose a flavored breadcrumb if you want to, but I prefer the nonflavored variety so that I can really taste the zucchini.
How Can I Make These Zucchini Rounds Vegan?
Instead of using eggs use some unsweetened and unflavored soy milk (or another vegan milk alternative) this will help to get the breadcrumbs to stick without using animal products.
How Do I Prepare My Zucchini?
Rinse your zucchini under the water and lightly scrub to remove any dirt. Chop off the ends with a sharp knife and then chop your zucchini into the desired thickness.
Oven Fried Zucchini Ingredients
-1 Med/Large Zucchini
-1/2 cup Panko
-Desired Seasonings (Salt, Pepper, Onion Powder, etc.)
How to Make Oven Fried Zucchini
Thinly slice your zucchini, set aside.
In a small bowl, beat your egg.
In another small bowl, combine your Panko and seasonings.
Pick up a slice of zucchini and dip both sides in the egg, then into the panko mixture. Make sure to get the slice well coated.
Arrange the slices on a parchment paper lined baking sheet to prevent sticking.
Bake in the oven at 425 degrees for 12 minutes and then turn on the broiler and bake until the tops turn a light brown (about 3 or 4 minutes).
Serve immediately with a side of ranch dressing.

How Do You Make Zucchini Not Soggy?
If you over bake your zucchini you may notice that it becomes soggy or softer than you’d like. This could also be because you sliced your zucchini too thin so it baked quicker. A good way to stop them from getting soggy is to put a baking rack on top of your.baking sheet to keep them elevated so that the air can get under the zucchini rounds.
Can I Make This Recipe With Yellow Squash?
Yes you can! Yello squash and zucchini can be pretty similar in a lot of recipes because they are both a type of squash. If you have yellow squash on hand and would like to use it, go for it!
