BROWNIE BAKED OATMEAL
Brownie Baked Oatmeal is made by mixing oats with sugar, brown sugar, cocoa powder, applesauce, and a few other simple ingredients. Add some mini chocolate chips for more chocolate flavor. Mix everything together and bake in a 9X9 pan. Slice and serve the baked oatmeal squares!
INGREDIENTS IN BROWNIE BAKED OATMEAL
Oats – Old-fashioned oats work best, but you can swap them out with quick oats if you prefer. Or, you can even use some of each.
Sugars – You will need brown sugar and white sugar. For best results, make sure that the brown sugar is soft and fresh. If you prefer your oatmeal to be a little less sweet, you can reduce the amount of sugar.
Cocoa powder – Unsweetened cocoa powder gives this oatmeal a rich chocolate flavor.
Baking powder – This is the leavening agent in the recipe. For best results, make sure that the baking powder isn’t old or expired.
Salt – Just a little bit of salt helps all of the other flavors to pop!
Eggs – Two large eggs will help to bind all of the other ingredients together.
Milk – Any kind of milk will work just fine, even non-dairy alternatives.
Applesauce – You can use unsweetened or regular applesauce. You can replace this with oil if you’d like, but applesauce adds flavor and is much lower in calories.
Vanilla extract – Just a little bit of vanilla extract adds a little flavor to the recipe. The higher the quality of the vanilla, the better.
Mini semi-sweet chocolate chips – You can’t have too much chocolate, right?! I like to use mini chocolate chips, but you can use regular ones if you’d like. The baked oatmeal is delicious without them too!
HOW TO MAKE BROWNIE BAKED OATMEAL
Preheat your oven to 350°F. Grease an 8×8-inch or 9×9-inch baking dish with non-stick cooking spray.
MIX DRY INGREDIENTS
In a large mixing bowl, combine the rolled oats, brown sugar, cocoa powder, granulated sugar, baking powder, and salt. Mix well to ensure all ingredients are evenly distributed.
MIX WET INGREDIENTS
In another bowl, whisk together the eggs, milk, applesauce, and vanilla extract until well combined.
COMBINE ALL OF THE INGREDIENTS
Pour the wet ingredients into the dry ingredients and stir until you have a smooth batter.
Fold in half of the semisweet chocolate chips.
BAKE
Pour the brownie oatmeal batter into the prepared baking dish, spreading it evenly. Top with the remaining chocolate chips.
Bake in the preheated oven for 40-45 minutes or until the edges are set, and the center is firm.
COOL & SERVE
Remove from the oven and let it cool for a few minutes before serving.
Slice and serve warm. Add fruit if it’s breakfast, or vanilla ice cream if it’s time for dessert!
