Ingredients

  • 1 cup rolled or old-fashioned oats
  • 1 cup brown sugar
  • ½ cup cocoa powder
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup milk
  • ¼ cup applesauce unsweetened or regular
  • ½ teaspoon vanilla extract
  • ¼ cup mini semi-sweet chocolate chips

Instructions

  • Preheat your oven to 350°F. Grease an 8x8-inch or 9x9-inch baking dish with non-stick cooking spray.
  • MIX DRY INGREDIENTS: In a large mixing bowl, combine the rolled oats, brown sugar, cocoa powder, granulated sugar, baking powder, and salt. Mix well to ensure all ingredients are evenly distributed.
  • MIX WET INGREDIENTS: In another bowl, whisk together the eggs, milk, applesauce, and vanilla extract until well combined.
  • COMBINE ALL OF THE INGREDIENTS: Pour the wet ingredients into the dry ingredients and stir until you have a smooth batter.
  • Fold in half of the semisweet chocolate chips.
  • BAKE: Pour the brownie oatmeal batter into the prepared baking dish, spreading it evenly. Top with the remaining chocolate chips.
  • Bake in the preheated oven for 40-45 minutes or until the edges are set, and the center is firm.
  • COOL & SERVE: Remove from the oven and let it cool for a few minutes before serving.
  • Slice and serve warm. Add fruit if it's breakfast, or vanilla ice cream if it's time for dessert!
