We love traditional Chicken Pot Pie, but this soup version is absolutely delicious as well. This soup is perfect for when you want the comfort of chicken pot pie, but you need it quick and easy. Without the crust, the cook time is much less.

This delicious soup recipe is made with a simple creamy base made with chicken broth and cream. Garlic, onion and celery are cooked in olive oil to add a ton of flavor to the soup. Adding frozen vegetables and rotisserie chicken saves a lot of time and allows you to have dinner ready in less than 30 minutes!

Ingredients in Chicken Pot Pie Soup
Frozen mixed vegetables: Using frozen vegetables saves a lot of time! I like to use a mix of carrots, corn, peas, green beans and potatoes, but you can use any frozen veggies that you like. Make sure to thaw the vegetables before adding to the soup. You can also use canned veggies, but make sure they are well drained.
Chicken: You will need a cup of cooked and shredded chicken for the soup. I usually use rotisserie chicken to save time!
Olive oil: Just a little bit of olive oil is used to cook the garlic, onion and celery. You can use avocado oil if you prefer.
Garlic: Just 2 tsp of minced garlic adds a lot of flavor to the soup! I always keep a jar of minced garlic in my refrigerator for recipes like this one.
Onion: Diced onion also adds a lot of flavor. I always buy diced onion from the frozen vegetable section of the grocery store and I keep a stash in my refrigerator so that I don’t ever have to chop onions!
Celery: Diced celery is delicious in this recipe. If you are like my kids and don’t like celery, it’s really easy to leave it out!
Milk: Whole milk works best to make the soup extra rich and creamy, but you can use 1%, 2% or even skim milk if you prefer.
Heavy whipping cream: Just a little bit of heavy whipping cream is fantastic. If you want to lighten up the soup a little bit, you can just add a little bit more milk instead.
Chicken broth: Chicken broth intensifies the chicken flavor in the soup.
Butter: You will need 4 tablespoons of butter to help make the base for the soup.
Flour: A little bit of flour helps to thicken up the soup, but you can also use cornstarch if you need to make the soup gluten-free.
Salt and pepper: Just a little bit of salt and pepper helps all of the other flavors to pop!
How to make Chicken Pot Pie Soup
In a large skillet, over medium heat, add olive oil, celery, garlic and onion. Cook until tender and set aside.
Add butter to the skillet until fully melted. Whisk in flour until thoroughly combined. Sprinkle in salt and pepper, mix well.
Pour chicken broth into skillet mixture, whisking until smooth.
Slowly add milk, then heavy whipping cream. Continuously whisk everything together and bring to a simmer.
Add in the chicken and all vegetables, mixing all ingredients until well combined.
Turn to low heat and let simmer for 5-8 minutes.

- 2 tsp salt
- 1 tsp black pepper

How to make Shredded Chicken for recipes
Although I usually use rotisserie chicken in this recipe, it is really easy to make your own shredded chicken. My favorite method is in the crockpot. Add some chicken broth to a few chicken breasts and cook on low for about 6 hours. The chicken will be moist, will shred easily and have tons of flavor too!
What type of vegetables to use in Chicken Pot Pie?
The recipe calls for frozen mixed veggies, which saves a lot of time! Try to find a mix that includes carrots, corn, green beans, peas and potatoes. It’s often tricky to find frozen diced potatoes, so I like to use canned potatoes. Just drain them and dice them up before using. You can use canned mixed vegetables as well. If you prefer to use fresh veggies, that’s fine, but you’ll want to steam them or boil them until tender before adding to the soup.
Can you freeze Chicken Pot Pie Soup?
Leftover Chicken Pot Pie Soup can be stored in the refrigerator for 3-4 days. This soup does freeze nicely if you want to make it further ahead of time. Place the soup in an airtight container and freeze for up to 2 months. Thaw the soup overnight in the refrigerator and then reheat in the microwave or on the stovetop.
