White Chocolate Chip Banana Bread made with classic ingredients, ripe bananas and sweet white chocolate chips to make this sweet bread decadent!

I swear, banana bread is one of those things you can eat all day long. A tender and moist quick bread made with ripe bananas- everything about that sentence just makes me hungry!
Ok, so I think it’s official. I am having a love affair with White Chocolate Chips. You can add them to almost anything and it just adds a sweet richness that’s divine! I have loved this super easy banana bread recipe since I can remember. It’s great for breakfast, or the perfect addition to brunch. I adore it toasted with butter!

Banana Bread recipe ingredients
Here’s what you’ll need to make this bread:
-½ cup oil: I love using a light olive oil, but you can use canola or vegetable oil if you prefer.
-¾ cup Sugar: just regular granulated sugar works the best for this bread.
-2 Eggs: aids in leavening and adding a richness to the batter.
-3 ripe Bananas, mashed. The most ripe you can find!
-Dry Ingredients: 2 cups Flour, ½ teaspoon Salt & 1 teaspoon baking soda, for leavening and the base of the recipe.
-3/4 cup White Chocolate Chips: I love Ghirardelli, but Nestle works as well. Some store brand I find brown more than others, just fyi.
Tips for Making Fantastic Quick Bread
Quick bread requires no yeast, but instead uses other ingredients for leavening. You want the bread to be soft, tender and moist with great flavor. Here are a few tips on how to achieve that:
Make sure it’s fully baked! Most quick breads need to be baked until 200°F. I like to use a cooking thermometer and insert it at an angle pointing towards the middle of the bread- which is the part that bakes last. If it’s not fully baked, the loaf will sink in the middle. I had no idea the pan you use makes such a difference too! I prefer glass or ceramic bread pans, but you can read all about the best bread pan.
Don’t use an electric mixer! Just mix by hand in a mixing bowl with a whisk or even a spoon. When you overmix quick bread, the bread is tough and doesn’t rise as well. It’s almost impossible to not overmix the batter if you use an electric mixer.
Don’t feel like you have to whisk out all the lumps! Most quick bread has something in it that helps the bread be moist and flavorful. So mix just to combine, then let it be.
Let the batter sit before baking. I swear by this! Just mix all the required ingredients by hand, then let the batter sit for a good 5-10 minutes. The flavors meld and the batter rests, and the result is a higher rise once baked and a delightful crumb.

Storage & Freezing
Store leftover bread in an airtight container for 4-5 days. A ziplock bag works just fine but you can also use any type of container you prefer.
Banana bread freezes beautifully! Just store it similarly for up to 2 months.
What’s the best bread pan to use?
I bake a lot of bread and the pans I prefer are either ceramic, glass or cast iron. These pans will bake bread more evenly and release the bread more easily after baking. I don’t like using dark or (most) nonstick pans because the bread cooks unevenly. It darkens on the outside before the bread is cooked on the inside, so the coloring is uneven. Instructions
- Preheat oven to 350°F. Prepare a loaf pan by lining it with parchment or spray with non-stick spray.
- Whisk oil and sugar together in a medium sized mixing bowl. Add in eggs and mashed banana and stir until combined.
- Whisk dry ingredients together in a separate bowl.
- Pour 1/3 of the dry ingredients into the wet ingredients. Stir several times with a rubber scraper. Repeat until all dry ingredients are incorporated.
- Stir in ⅔ of the white chocolate chips. Pour batter into prepared bread pan. Top with remaining white chocolate chips.
- Bake 350°F for 50-55 minutes. If you have a mini-loaf pan it takes 35-45 minutes. Test doneness using a cooking thermometer. Internal temp should register 195-200°F. Remove from oven. Let cool 10 minutes, then overturn loaf on a cooling rack to cool completely. Slice and enjoy!

AVOID SUNKEN BREAD
The easiest and best way to avoid sunken bread is to use a cooking thermometer to check the inside of the loaf. Fully cooked bread will register 200°F on a thermometer. My all-time favorite thermometer is the Thermapen. It’s super fast and incredibly durable. Another great cooking thermometer is the ThermoPop which is a more basic version that works just as well!
What can I do to make banana bread more healthy?
You can switch the shortening for applesauce! I do it all of the time. Just use 4oz of applesauce in place of the butter and the recipe is instantly a little healthier. As an added bonus it also helps to make the bread moist too! Win-win!
Can I freeze banana bread?
Yes! After your loaf has completely cooled, you can wrap them well with plastic wrap and then store in an airtight container or a Ziploc bag. Then freeze for up to 3 months.
Can I use frozen bananas?
Absolutely! Just let the bananas thaw before use and lightly drain them. Use them in the recipe as directed.
