We love bread recipes and this quick bread is simple and PERFECT for summer. When those strawberries are ready to be picked off the vines or start going on sale in the stores, you’re going to be as thankful for this strawberry bread recipe as we are.

This fresh strawberry quick bread recipe packs a lot of flavor and moisture in every bite. At first glance, this bread may even look similar to a pound cake. The biggest differences between the two are that this recipe has far less butter, sugar, and steps to making the recipe. Easy quick bread recipe that everyone loves!
What is the Best Bread Pan to Use?
I used a 12″ Norpro Bread pan for this bread, but a standard sized 9″ or 10″ bread pan would work beautifully. My favorite, most dependable bread pans are glass or ceramic. I love my cast iron bread pan too! You can read more about how I chose which bread pan is the best here.
Glazed strawberry bread ingredients
-Eggs: We need 2 eggs to help bind our bread together and to help with the leavening.
-Sugar: Adding ¾ cups of sugar to our bread will help make it sweet and give it a great texture on top.
-Oil: We need some fats to keep our bread moist, so 1/2 cup of vegetable oil (or canola) will do the job nicely.
-Milk: Using ½ cup of milk (dairy or non-dairy) we can add moisture into the batter to thin it down into a good consistency.
-Flour: The base of our bread is 2 cups of all-purpose flour but we will need another 2 tablespoons for tossing the strawberries in.
-Vanilla: To help enhance the flavors of this bread we want to use 1 tablespoon of vanilla extract. Stronger vanillas will produce stronger flavor results, but use what you have on hand.
-Leavening agents: We need 2 tsp of baking powder and 1 tsp of baking soda to make sure our bread has enough leavening agents to rise up beautifully as it bakes.
-Salt: This is a natural flavor enhancer and just a pinch of salt will help to bring out all of the flavors in our bread.
-Strawberries: We need 1 ½ cups of fresh diced strawberries but it will be divided between the batter and the topping.
For the glaze:
Powdered sugar: To make our glaze smooth and sweet we need 1 ¼ cups of powdered sugar.
Heavy cream: Using ¼ cup heavy cream to combine with the powdered sugar will make our glaze rich & tasty
How to make strawberry bread
Preheat your oven to 350 degrees F and grease a bread pan with butter and a light dusting of flour to coat the sides and bottom of the pan. Set pan aside.
In a medium-sized mixing bowl, whisk together the eggs and sugar.
Add in the oil and the milk.
In another bowl whisk together the dry ingredients. Add the dry ingredients to the wet ones and mix to combine.
Toss 1 cup of diced strawberries with 2 tablespoons of flour until well coated.
Add berries to the bread batter and fold to combine.
Pour the batter into your prepared bread pan.
Bake for 40-50 minutes or until a toothpick can be inserted and come out clean.
Let cool for 10-15 minutes in the pan before removing from pan and letting finish cooling on a rack.
In a large bowl whisk together the powdered guar and heavy cream for the glaze. Stir in 1/4 cup of strawberries and then pour the strawberry glaze over the bread.
Top with remaining strawberries and serve. Enjoy!
AVOID SUNKEN BREAD
The easiest and best way to avoid sunken bread is to use a cooking thermometer to check the inside of the loaf. Fully cooked bread will register 200°F on a thermometer. My all-time favorite thermometer is the Thermapen. It’s super fast and incredibly durable. Another great cooking thermometer is the ThermoPop which is a more basic version that works just as well.
Strawberry Bread with Glaze
Ingredients
- 2 eggs
- 3/4 cup sugar
- 1/2 cup vegetable oil
- 1/2 cup milk
- 2 cups flour
- 1 TBSP vanilla
- 2 tsp baking powder
- 1 tsp baking soda
- 1 pinch salt
- 1 1/2 cups fresh diced strawberries divided
- 2 TBSP flour
for glaze:
- 1 1/4 cup powdered sugar
- 1/4 cup heavy cream
Instructions
- Preheat oven to 350°F. Grease a bread pan with non-stick spray or butter, then dust with flour to coat sides & bottom. Set aside.
- Whisk the eggs and sugar together in a medium sized mixing bowl. Then add the oil and milk. Whisk the dry ingredients in a separate bowl, then slowly add the dry ingredients to the wet ingredients.
- Toss 1 cup of the fresh diced strawberries with the 2 TBSP flour until berry pieces are coated. Pour the berries onto the bread batter, then gently fold the berries into the mixture.
- Pour batter into prepared pan.
- Bake in oven at 350 F degrees for 40-50 minutes, until internal temp registers 200°F, or a toothpick inserted comes out clean.
- Let bread cool for 10-15 minutes, then overturn onto a cooling rack to finish cooling.
- Whisk the powdered sugar and cream in a large bowl, then add 1/4 cup of the fresh strawberries. Pour over the cake, then top with remaining strawberries & serve.

Can you freeze strawberry bread?
After the bread has been cooled it can be frozen. I recommend freezing it without glaze as that makes it a lot easier to thaw and serve. (You can always add the glaze before serving). Simply take your cooled loaf and wrap it well in plastic wrap and store it in an airtight container in the freezer for up to a few months. Thaw on the counter or in the fridge before eating.
How to store strawberry bread
Store this bread (glazed or unglazed) in an airtight container or gallon-sized zipper topped baggie. This will help to keep it nice and fresh. Since it has so many fresh strawberries in it, I think it’s best to store this in the fridge.
