Sheet Pan BBQ Meatballs are ready in less than an hour! Delicious homemade meatballs are shaped and basted with BBQ sauce, then cooked with zucchini, tomatoes, corn, and squash. Easy and delicious dinner recipe made all in one pan!
I don’t know about you, but dinner time is a crazy time at my house. I’m usually driving kids from one activity to another, and I don’t have much time for meal prep. I love sheet pan meals because they are so quick and easy to prepare and then the whole dinner is ready at one time!
What to serve with Sheet Pan BBQ Meatballs
The great thing about sheet pan meals is that you don’t have to add anything else to have a complete dinner. But if you have the time or want to add a few sides, this simple sheet pan meal is wonderful served with Macaroni and Cheese, Copycat KFC Coleslaw, and Cheesy Cornbread Muffins. The meatballs and veggies are also delicious when served over rice. And don’t forget dessert! Try a slice of White Chocolate Raspberry Bundt Cake or a serving of Butterscotch Lush.
Ingredients in Sheet Pan BBQ Meatballs
VEGGIES
Zucchini and squash – The recipe calls for 2 medium zucchini and 1 medium yellow squash, but you can use more or less of either. Make sure to remove the ends before slicing.
Corn – The recipe calls for 2 cups of frozen corn, but you can use fresh corn or canned corn if you’d like.
Grape tomatoes – You will need 10 ounces of grape tomatoes, sliced in half. If you’re like me and you don’t like tomatoes, leave ’em out!
Olive oil – Just a tablespoon of olive oil is needed to drizzle over the veggies before cooking them. You can use avocado oil or another type of oil, or even melted butter if you prefer.
Garlic powder, salt, pepper – A few basic seasonings really help to add flavor to the veggies.
Lime juice – You can use fresh lime juice or the kind from a bottle – they both work great!
Crumbled feta and fresh basil – Feta and basil make a great garnish on top, right before serving. Both are completely optional!
BBQ MEATBALLS
Ground chicken – The recipe calls for ground chicken, but you can use ground turkey, pork, or beef instead if you prefer.
Panko bread crumbs – You can use regular bread crumbs, but panko bread crumbs provide the best texture for the meatballs.
Onion – One finely diced medium red onion adds a lot of flavor to the meatballs.
Egg – One lightly beaten egg is needed to bind all of the other meatball ingredients together.
BBQ sauce – Some of the BBQ sauce is mixed into the meatballs and some is reserved to baste on top. You can use any brand or variety of BBQ sauce that you like!
Salt, chili powder, garlic powder, black pepper – A little bit of seasoning adds a lot of flavor to the meatballs.
How to make Sheet Pan BBQ Meatballs
Preheat oven to 400° F.
Place zucchini, squash, corn, and tomatoes on a large, rimmed sheet pan. Drizzle with olive oil, and season with garlic powder, salt, black pepper, and lime juice.
Transfer to the oven and roast for 15 minutes.
Combine the chicken, panko, red onion, egg, ¼ cup BBQ sauce, salt, chili powder, garlic powder, and pepper in a large mixing bowl.
Using a cookie scoop, roll the mixture into 1 ½ or 2 tablespoon balls.
Remove the sheet pan from the oven and use a spatula to push the vegetables to one side, or spread out across the entire sheet pan. Set the oven temperature to 425° F.
Place meatballs on the other side of the sheet pan, or on top of the vegetables.
Bake for 10-15 minutes. Baste the meatballs with the remaining ¼ cup of BBQ sauce every 5 minutes.
Garnish with crumbled feta and chopped basil before serving.

How do I know when the meatballs are cooked through?
The best way to tell if meat is cooked is to use a meat thermometer. I use a meat thermometer whenever I cook meat, just to be sure it is cooked thoroughly. Chicken must be cooked to an internal temp of 165°. If you use ground beef or pork for the meatballs, you will need to cook them to an internal temp of 160°. My all-time favorite meat thermometer is the Thermapen. It’s super fast and incredibly durable. Another option is the ThermoPop which is a more basic version that works just as well!
How to store leftover meatballs
Leftovers can be stored in an airtight container in the fridge for up to 3 days. They also freeze beautifully for up to 3 months. I like to double the batch and freeze half of the meatballs for another day.
WHAT BBQ SAUCE IS BEST IN THIS RECIPE?
In the past, I have usually used Sweet Baby Ray’s BBQ sauce, but I’ve been trying some others lately. Costco has been carrying the Kinder’s brand which I really love because it is organic, has much cleaner ingredients, and I actually think it tastes so much better than many of the other varieties that I’ve tried. I prefer the Mild BBQ flavor, but they have some varieties that have more kick to them if you like spicy!
Blues Hog has a reputation of having some of the best BBQ sauce out there, but I have actually never tried it. It is also made with all-natural ingredients and there are quite a few varieties to try!
Recipe Variations for Sheet Pan BBQ Meatballs
If you’d like to change up the flavors a little bit, or you need to use up the meat and veggies you have in your fridge, here are some possible variations:
- Use ground turkey, pork, or beef instead of chicken.
- Give the meatballs a little more spice with red pepper flakes, hot sauce, or spicy BBQ sauce.
- Add other vegetables like bell peppers, mushrooms, asparagus, green beans, and broccoli.
