Cookie bars are one of my favorite desserts because they are so easy to make and take so much less time than scooping out individual cookies. Raspberry Oatmeal Bars have all of the goodness of a homemade oatmeal cookie combined with sweet raspberries!
What are raspberry oatmeal bars?
Raspberry Oatmeal Bars are a simple cookie bar filled with oats and cinnamon and filled with raspberry pie filling. These oatmeal bars are made with just a few basic ingredients and only take a few minutes to put together before baking.
Ingredients in Raspberry Oatmeal Bars
Butter: Use butter, not margarine and make sure that it is softened to room temperature before adding to the recipe.
Brown sugar: I use light brown sugar, but dark would work fine too. You’ll get the best results if the brown sugar is soft and fresh!
Baking soda: Just need a little bit, but make sure it is fresh too or the oatmeal layers will be a little more dense than you’ll want.
Flour: I always use all-purpose flour, but I’m sure you could swap a little bit of it out with wheat flour. I’d start with less than half and see how much that affects the taste and texture of the bars before trying to swap more.
Oats: I think that quick oats work best in this recipe because they are not quite as chewy and mix in better, but you can definitely use old-fashioned oats instead. Or sometimes I use a combination of the two. It all tastes delicious!
Raspberry pie filling: You just need one can of pie filling, but if you really like the filling, you can add another can. You can also use a different kind of pie filling…peach, apple, blueberry, cherry. If you have a homemade pie filling, that works great too!
Cinnamon: Adds a little bit of extra flavor to the top layer. You can add some to the bottom layer as well if you really like cinnamon – I do!
How to make Raspberry Bars
Preheat oven to 350°.
In a large bowl, cream the butter and brown sugar together for 2-3 minutes. Add in the baking soda and flour and mix just until well combined.
Mix in the oats. The mixture will be a little bit crumbly but the oats should mix in well. Take 2 cups of the cookie dough out of the bowl and save for later. Press the remaining cookie dough into the bottom of a 10X15X1 cookie sheet. Bake for 15-18 minutes, or just until the cookie layer begins to turn a light golden brown.
Remove from the oven and spread the pie filling over the crust. Stir the cinnamon into the remaining cookie mixture and then sprinkle over the top. Lightly press the topping into the pie filling. Bake another 20-25 minutes or until the top turns a light golden brown.
Cool completely and slice into bars. Makes about 40 bars.

Can you use a different type of pie filling?
Raspberry pie filling is wonderful, but you can use any flavor you’d like! We really like to use cherry or blueberry as well, but I think peach or apple would be amazing too! If you do use peach or apple, you will probably want to chop the fruit in the filling into smaller pieces.
What kind of oats to use in oatmeal bars?
I prefer to use quick oats in these bars because they are a little bit easier to chew that way, but you can use regular rolled oats instead if you prefer. The results will be a little bit chewier, but the taste will be almost the same.
