Cookie Dough Truffles
My husband loves cookie dough so I am always on the look out for great recipes that use it. I saw a cookie dough truffle and thought using peanut butter cookie dough would be a nice twist. These were a huge hit in my family and I love how simple they are to make. Cookie dough truffles are made by making an edible cookie dough, rolling it into balls and then dipping it into chocolate. These cookie dough truffles are perfect for holiday cookie trays or any type of party. Easy to make, easy to serve and eat and everyone loves them!
Is cookie dough safe to eat?
Although regular cookie dough is generally not considered safe to eat because of the raw eggs and flour in the dough, this particular recipe does not have eggs in it. It does include flour, which you can easily heat treat in order to kill any bacteria that might not be safe. That way you can eat as much of this cookie dough as you want!
How to heat treat flour?
You can either heat treat flour in the microwave or in the oven. To use the microwave, just place the flour in a glass bowl and microwave in 30 second intervals until the flour reaches 165°. This usually takes about 1 1/2-2 minutes depending on your microwave and the amount of flour.
To heat treat flour in the oven, preheat the oven to 300°. Spread the flour out on a baking sheet and then place the flour in the oven, checking every 2 minutes until the temp of the flour is at 165°. This usually takes about 6-10 minutes.
Peanut Butter Cookie Dough Truffle Ingredients
Butter: For a nice rich dough, use 1/2 cup of butter (1 stick), softened.
Brown sugar: Add in 3/4 cup of brown sugar for a great depth of flavor.
Peanut butter: You will need 1/4 cup of peanut butter, any type you would like, creamy or chunky depending on your preference.
Flour: Use 1 cup of flour to create a nice dough texture.
Vanilla extract: Adding in 1/2 teaspoon of vanilla extract helps enhance all the amazing flavors in this recipe.
Salt: You need 1/4 teaspoon of salt to balance the flavors well.
Milk: For great texture, use 1 tablespoon of milk.
Chocolate chips: Add in 1/3 cup of mini chocolate chips for a great tasty crunch in these truffles.
Truffle Coating
Peanut butter: For a smooth drizzle, use 1 tablespoon of peanut butter + 2 teaspoons of butter (melted then whisked together).
Chocolate: You will need 1 1/2 cups of melting chocolate or 1 1/2 cups chocolate chips + 1 tablespoon of shortening, for the truffle coating.
Step by step on how to make Peanut Butter Truffles
Truffle dough
Start by combining the butter, brown sugar, peanut butter, vanilla extract, salt and milk in a large mixing bowl. Mix all the ingredients until well combined and then add in flour until dough pulls away from the sides of the bowl. Lastly, add the mini chocolate chips and mix well to combine.
Using a cookie dough scoop, measure out 2 tablespoons of dough and form into a ball. Proceed to place on a parchment covered baking sheet. Once you have all the truffles formed, place the sheet in the freezer for 30 minutes.
Chocolate dip
After the truffles are well chilled, melt the dipping chocolate. I love using this chocolate dipping sauce because it is super easy to use and it tastes fantastic. The trick to melting chocolate in the microwave is to go slowly and stir gently, start with 30 seconds, then check it, then put on for another 30 seconds, then if it is nearly all melted, just take it out and let it finish melting in the warm bowl.
I like to dip the truffles using 2 tooth picks, one in each hand. Stick one about 1/4 of the way into a frozen truffle, then just dip in the chocolate, coating all sides. You can use a rubber scraper to help coat the truffles. Once it is coated, shake lightly to remove excess chocolate and use the toothpick your other hand to help remove the truffle from the first toothpick and set it down on the chilled baking sheet. If you also set the chocolate-coated truffle down on the pan, then twist the toothpick slightly, it will dislodge easily.
If you would like to do the peanut butter glaze on top like I did, melt 1 tablespoon of peanut butter and 2 teaspoons of butter in a small bowl. Then microwave for 30 seconds and whisk to combine. Transfer it to a small plastic baggie and let cool until you are ready to use. When you are ready, snip the corner and drizzle across each truffle.
Refrigerate until ready to serve and enjoy!

You will want to keep your edible cookie dough in the fridge, in an airtight container. These truffles will be good for 3-5 days to enjoy. I suggest adding a slip of parchment paper between each layer of truffles to ensure they do not stick together.

Yes, keep these candies stored in an airtight container after they have fully cooled and set. Then place in the freezer for 4-5 months and thaw before eating. You can thaw the candies quickly and easily by simply placing them on the counter for an hour or so.
