What is Almond Roca?
Almond Roca is a favorite treat around the holidays, and this homemade version tastes even better. Almond Roca is the brand name for English toffee which is basically a hard buttery toffee made with almonds and milk chocolate.
Almond Roca is a fantastic treat to bring to holiday parties because you make it a few days in advance and it stays fresh in the refrigerator. You can even make it a couple of months in advance and store it in the freezer. It makes a great friend and neighbor gift for the holidays and it is the perfect addition to the goody platters I make each year for everyone!
What type of chocolate to use in Almond Roca?
I use Hershey bars in this recipe, but you can use another brand of milk chocolate if you prefer. You’ll need 16 oz (1 pound of chocolate). If you’re using regular Hershey bars (1.55 oz), you will need about 10 of them.
Ingredients in Easy Homemade Almond Roca
Almonds – You will need about 10-12 ounces of almonds. They need to be finely chopped before adding them to the recipe. You can use a nut grinder or you can buy the almonds already chopped.
Hershey chocolate – You need one pound of Hershey chocolate. You can use several smaller bars or a couple of the larger bars – it all works fine as long as it adds up to one pound. You will want to shred it before using it. I just use a regular cheese grater to grate the chocolate – it’s easier to grate it without it melting and making a big mess if you freeze the chocolate for about at least an hour before you grate it.
Butter – The recipe calls for 4 sticks (1 pound) of butter. Nope, never claimed that this stuff was low-calorie or necessarily healthy! For best results, make sure you use real butter.
Sugar – Yep, you need two whole cups of sugar to make the candy. It sounds like a lot, but really, what’s a few more calories when you already have a pound of butter? It’s all worth it, I promise!
How to make Easy Homemade Almond Roca
Place a piece of parchment paper on the bottom of a jelly roll plan (10″X15″X1″). Spread 1/2 of the almonds on the parchment paper.
Stirring constantly, cook the butter and sugar in a saucepan over medium-high heat to the hard crack stage (325°). Immediately pour over the chocolate and almond layers. Immediately top with remaining chocolate and then sprinkle the remaining almonds on top. Let set up and then break or cut into pieces to serve.

- 1 pound Hershey chocolate shredded
- 1 pound butter 4 sticks
- 2 cups sugar

How to check temperature when making toffee
When making toffee (or many other homemade candy recipes), you’ll need to have a thermometer to check the temperature while you are cooking the butter/sugar mixture. I like to use a digital candy thermometer like this one because it’s so easy to see exactly what the temperature is.
What is the best way to chop almonds?
I like to chop almonds with a food processor, but you can use a knife as well. You can even use a blender, but just make sure to use the pulse option so that you don’t turn the almonds into powder! You can also use a traditional nut grinder, or place the almonds in a large Ziplock bag and use a rolling pin or meat mallet to crush them.
How to store Almond Roca
Store your Almond Roca in an airtight container on the countertop. It stays fresh for about a week, although it tastes the best the first 3-4 days.
Can you freeze Almond Roca?
You can freeze Almond Roca for up to 6 months. It stays freshest if you break it up into pieces and then wrap each piece in parchment paper before placing them into a Ziplock freezer bag or airtight container.

Your almond roca recipe is very similar to one that I already make. But my question is if I use a larger pot, can I double the recipe and do two recipes at once?
