I love chocolate. And peanut butter. And caramel. Put ’em all together to make these amazing Chocolate Caramel Peanut Butter Bars! The base of the recipe is a white cake mix which makes these bars extremely easy and fast to make. You don’t even have to add oil or water – just some oats, a little bit of milk, and an egg, along with a large serving of peanut butter!
The next layer in these quick and easy dessert bars is made of caramel topping and cream cheese…mixed together! Why have I never thought of mixing caramel and cream cheese together before?!?! Once you mix this layer together, make sure to try a little taste. And then I dare you to stop with just one lick. Just try to save enough to still be able to make your dessert!
The chocolate chips come next, followed by the rest of the crust mixture on top. These bars are very rich, and like all chocolatey, peanut butter, caramel treats, they taste better served warm. With a scoop of vanilla ice cream!
Ingredients in Chocolate Caramel Peanut Butter Bars
- 1 white cake mix
- 1 cup quick oats
- 1/2 cup creamy peanut butter
- 1 egg
- 2 tablespoons milk
- 1 (8 oz) pkg. cream cheese, softened to room temperature
- 1 (12 oz) jar of caramel ice cream topping
- 2 cups semi-sweet chocolate chips
How to make Chocolate Caramel Peanut Butter Bars
- Mix the cake mix and oats together in a large bowl. Use a mixer to add the peanut butter until well combined.
- In a separate small bowl, beat the egg together with the milk. Add the egg mixture to the cake mix and oats and mix well.
- Reserve 1 cup of the oat mixture and set aside. Press the rest of the mixture into the bottom of a well-greased 9X13 pan.
- In another bowl, beat the cream cheese with an electric mixer for 1-2 minutes until well blended and smooth. Add the caramel topping, beat for 2 more minutes until smooth. Pour the caramel mixture on top of the crust.
- Sprinkle chocolate chips evenly on top of the caramel layer. Sprinkle the 1 cup of reserved crust on top of the chocolate chips.
- Bake at 350° for 28-30 minutes or until the top is light golden brown. Cool and then cut into bars.

How to soften cream cheese
Cream cheese is easy to soften – you can set it out at room temperature or soften it more quickly in the microwave.
-To soften at room temperature more quickly, just set the cream cheese on a plate and cut into smaller pieces. The cream cheese should reach room temperature in about 15-20 minutes with this method.
-To soften the cream cheese in the microwave, remove the foil packaging and set the cream cheese in a small bowl or on a plate. Microwave for about 10-15 seconds. If the cream cheese is still cold and hard, continue to microwave for about 5 seconds at a time until the cream cheese is soft throughout. Just make sure not to microwave it too long or it will start to melt!
Once the cream cheese is softened, use an electric mixer for a few minutes to whip it and make sure it is completely smooth before adding the other ingredients.
