Strawberry Cake Mix Cookies are perfect for any occasion. They’re so simple to make that you can make a batch whenever you want, including for holidays like Valentine’s Day or even a baby shower (they are a perfect shade of pink).
Tips to get the PERFECT Cake mix cookies:
Using parchment paper is an amazing product to use that helps to keep the cookies from sticking to the pan and helps to prevent overcooking the bottoms of the cookies. With this you don’t even need cooking spray!
A KitchenAid mixer is a great way to reduce your hands-on effort. Using the cookie paddle attachment helps you to get the cookie dough mixed perfectly every time.
Having a cookie scoop helps to have measured and uniformly sized cookie dough balls. This lets all of your cookies grow to the same size and cook at the same speed.
To make colorful and festive Strawberry cake mix cookies like I did, use half the amount of white chocolate chips and use colorful M&M’s for the other half.
What Are Cake Mix Cookies?
Cake mix cookies are soft and chewy cookies made out of a simple box of cake mix. This not only saves you a significant amount of time and dishes in the kitchen as opposed to regular cookies, but it also gives you some very flavorful cookies!
Do I Have To Use White Chocolate Chips?
Nope! While these strawberry cake mix cookies taste amazing with white chocolate chips, you don’t have to use them if you don’t want to. You can even choose to use a different variety of chocolate instead like dark chocolate, milk chocolate, or semi-sweet. I used half white chocolate chips and half chocolate candies, so there are plenty of options out there to choose from!
Strawberry Cake Mix Cookie Ingredients
-1 box 15.25 oz Strawberry Cake Mix: If you’re having a hard time finding strawberry cake mix, you can always use a vanilla cake mix, then add a bit of food coloring, plus 2 tsp strawberry emulsion extract. It tastes SO much better than regular strawberry extract!
-2 eggs: they work as a binding agent for holding the cookie dough together!
-1/3 cup melted butter: you can use coconut oil if you prefer!
-1 1/2 cups white chocolate chips or chocolate candies (M&M’s)
How to Make Strawberry Cake Mix Cookies
Preheat your oven to 350 degrees F and line a cookie sheet with parchment paper.
Combine the cake mix and the eggs in a medium sized mixing bowl. Add in the melted butter and mix well.
Add in the white chocolate chips/ candies and then stir to combine. I prefer to stir the candy in by hand so that they don’t get crushed.
Use a medium 1.5 TBSP cookie scoop to measure out dough and then place them on the cookie sheet. If you’d like, you can top the cookies with a few more chocolate candies.
Bake for 8-10 minutes. Once they’re done, remove them from oven and let them rest for another 3-5 minutes on the hot cookie sheet. Transfer to baking racks to cool completely.

Try with banana cake mix instead of strawberry. Delicious! We liked the strawberry ones too. I used dark chocolate chocolate chips in both flavors.

Batter was really thick ( like bubble gum) ,without the stickiness. Each ball had ALOT of M&M’s. In the video they use soft butter . the recipe calls for melted?

I’ve used both softened butter and melted butter in these cake mix cookies- once the dough sits for even a few minutes, the results are the same. Maybe add a bit of milk next time?

I suspected I could be in trouble when the dough became akin to paste – could it be because the cake mix I got had pudding added? That wasn’t intentional, I didn’t notice ’til I pulled the box from my pantry shelf. I think 1 1/2 cups of chips / M&Ms is too much.

I didn’t have white chocolate chips so I used mini m&most, my husband & I didn’t care for them at all. I put whipped fluffy white icing on them 2 help with the taste & sugar sprinkles but it really didn’t help! I think strawberries & pineapples would have been waaay better!

Cake mix cookies do tend to be a bit sticky! You can grease your spoons or cookie scoop before scooping out the dough to make it a little bit easier.
