Baked Chicken Parmesan Bundles are absolutely amazing – definitely my favorite version of Chicken Parmesan! The recipe is simple to make and the final result has amazing flavor. It’s a fantastic weeknight dinner recipe that everyone loves and it is also great for dinner parties since it is so easy to serve out individual portions.
This parmesan chicken recipe has three types of cheese in the filling and the breading is made out of crushed Ritz crackers – so easy and the flavor is absolutely delicious! If you have really picky eaters, it’s really easy to just leave the spinach out. I love that this version is baked so there is no need for frying. This recipe is a great low-carb, high-protein entree that everyone loves! If you are really trying to cut out carbs, just completely leave the breading off – the stuffed chicken is still delicious!
What to serve with Chicken Parmesan?
Chicken parmesan is typically served over a bed of pasta, but it can be a great low-carb meal when paired with a green vegetable and/or a salad. The stuffed chicken breast is very filling and I usually don’t even bother making noodles to go with it!
Ingredients in Baked Chicken Parmesan Bundles
- 4 oz cream cheese, softened
- 10 oz pkg frozen chopped spinach, thawed and well-drained
- 1 1/4 cups shredded mozzarella cheese, divided
- 6 Tbsp grated parmesan cheese, divided
- 6 small boneless, skinless chicken breast halves, or 12 chicken tenders, pounded to 1/4 inch thickness
- 1 egg
- 10 Ritz crackers, crushed
- 1 1/2 cups pasta sauce
How to make Baked Chicken Parmesan Bundles
- Preheat oven to 375°. Mix cream cheese, spinach, 1 cup of mozzarella cheese and 3 Tbsp of the parmesan cheese until well blended. Spread evenly onto the chicken breasts/tenders. Starting at one of the short ends of each breast/tender, roll up each chicken tightly. Secure with wooden toothpicks and set aside.
- Beat egg in shallow bowl or pie plate. Mix remaining 3 Tbsp Parmesan cheese and the cracker crumbs in separate shallow bowl or pie plate. Dip chicken bundles in egg and then roll in crumb mixture. Place seam-sides down in a greased 9X13 baking dish.
- Bake for 30 minutes or until chicken is cooked through (165 F). During the last 10 minutes of baking, heat the pasta sauce in a saucepan over medium heat. Once chicken is out of the oven, remove and discard toothpicks. Serve topped with the heated sauce and the remaining 1/4 cup mozzarella cheese. If you want to melt the cheese on top, just return to the oven for a few minutes or place under the broiler for a minute or two, just until the cheese is melted.

How to crush Ritz crackers?
Your method of crushing the crackers will depend on how fine or coarse you want the crumbs to be. If you want really fine crumbs, use a blender or food processor. If you prefer larger pieces of cracker and a more coarse breading, then just place the crackers in a Ziplock bag and use a rolling pin or meat mallet to crush them up. You can even just smash them with your hands!
You could also use Italian bread crumbs for the breading, but I just love the buttery flavor of the crackers in this chicken parmesan recipe!
