We love poke cakes and this one is absolutely amazing. It’s ready to hit the dessert table at your next BBQ, potluck, or holiday family gathering. Made with a few simple ingredients and kept chilled in the fridge, it’s the perfect way to cool down after a hot day in the sun!
WHAT IS A POKE CAKE?
A poke cake is a cake that has been baked in a large pan (usually a 9×13 baking dish) then after cooling, it’s literally poked either with the back end of a wooden spoon, a toothpick, or the tines of a fork. After that, a liquid (usually pudding or jello) is poured over the top so that it can soak into the cake. Topped off with some whipped cream spread over the top and chilled for a few hours before serving. This cake is a wonderful blend of easy instructions, tasty goodness, and versatility.
What is Orange Creamsicle Poke Cake?
Orange Creamsicle Poke Cake has so much flavor! Orange soda is added to the cake mix and the orange Jello filling! The topping is made with Cool Whip, orange Jello and vanilla pudding. The whole cake is filled with that vanilla/orange flavor combination that is so yummy!
Ingredients in Orange Creamsicle Poke Cake
White cake mix – You will need one box of white cake mix to make this cake recipe.
Butter – Use one stick of butter and make sure to melt it before adding to the cake mix.
Eggs – The recipe calls for 3 large eggs.
Orange soda – One cup of orange soda provides most of the liquid that you need to make the cake. It basically is replacing the water that you usually use with a cake mix.
ORANGE JELLO FILLING:
Water – You will need 1 cup of boiling water and 1/2 cup of cold water to mix with the Jello and orange soda to pour over the cake once it is cooled.
Orange soda – You will need 1/2 cup of orange soda for the filling for the cake.
Orange Jello – One small box (3 oz) of orange jello makes enough jello mixture for the filling.
ORANGE TOPPING:
Vanilla instant pudding – One small box (3.4 oz) of vanilla instant pudding provides the base for the topping of the cake.
Orange jello – You will need another small box(3 oz) of orange jello for the topping layer.
Milk – Any type of milk will work to mix with the pudding.
Vanilla – Two teaspoons of vanilla will add even more vanilla flavor to the creamy topping.
Cool Whip – One 8 ounce container of Cool Whip is mixed with the pudding and Jello to make the topping light and creamy. Make sure the Cool Whip is thawed before adding to the other ingredients.
How to make Orange Creamsicle Poke Cake
Preheat oven to 350° and grease a 9X13 pan.
In a large bowl, mix the cake mix with the butter, eggs and orange soda. Mix for about 2 minutes and then pour into the prepared pan.
Bake for about 25-30 minutes or until a toothpick inserted in the middle comes out clean. Let cake cool completely before adding the filling (about 1-2 hours).
When cake is cooled, use the handle end of a wooden spoon to poke holes about 1” apart in the cake. Add 1 box of orange jello to boiling water and stir until dissolved. Add the cold water and orange soda and mix together. Pour the Jello mixture over the cake, making sure to go over all of the holes. Place in the refrigerator for about 2-3 hours for Jello to set.
To make the topping, mix pudding with milk and other box of jello and the vanilla. Whisk until smooth. Fold in the Cool Whip and frost the chilled cake. Refrigerate until ready to serve.

WHEN SHOULD YOU POKE A POKE CAKE?
You should aim to poke the cake after it has cooled enough that if you touched the pan with your hands it wouldn’t hurt. While the cake may be warm for a few hours after baking, about 1-2 hours after being pulled from the oven is fine for continuing with the poking and decorating.
CAN YOU REPLACE THE COOL WHIP?
If you can’t find Cool Whip where you live or you prefer not to use it in recipes, you can use stabilized whipped cream instead. If you just use regular whipped cream, the consistency will be too light and the cream will not hold up very well when mixed into the filling. It’s very simple to make your own stabilized whipped cream and it just takes a few minutes!
HOW DO YOU MAKE STABILIZED WHIPPED CREAM?
To make stabilized whipped cream, you will need the following ingredients:
- 4 ounces of cream cheese (softened to room temperature)
- 1/3 cup powdered sugar
- 1 tsp vanilla
- 1 cup heavy whipping cream
- Beat the cream cheese with the powdered sugar and vanilla until soft and smooth.
- In a separate bowl, beat the whipping cream just until soft peaks form.
- Add the cream cheese mixture to the whipped cream and beat until stiff peaks are formed. Store in the refrigerator until ready to use.
A little tip for making whipped cream faster. Use a metal bowl for whipping the cream and place the bowl in the freezer for about 30 minutes before you make the whipped cream. This will significantly decrease the amount of time that you will need to beat the whipped cream – the process will go much faster!
