If you’ve never had fruity pebbles with your cake, you’re not alone. It’s a pretty unique combination! This fruity cake is easy to make and has a homemade syrup, cake, and topping that combine for a colorful and flavorful bite. It looks so tasty and smells like a bowl of your favorite cereal, so serve with a tall glass of cold milk and sink your teeth into this creative combination.
What is a fruity pebbles poke cake?
A poke cake is a cake that is baked in a large pan, poked several times to create holes, and then smothered with a homemade syrup (usually liquid jello or a pudding mixture). For this fruity pebbles cake, we make our own homemade syrup with fruity pebbles, food coloring, and sugared water. This will help to make our cake flavorful, sweet, and filled with color. After that, there’s a cake speckled throughout with more fruity pebbles and topped with a simple whipped topping and more fruity pebbles. Every bite is packed with cereal as you can see, and once you dig in you’ll agree that this cake is as unique as it is tasty.
Fruity Pebbles Cake Ingredients
Fruity Pebbles Simple Syrup
-Warm Water: We need 1 1/2 cups of warm water (about 110 degrees F) for the base of the syrup mixture.
-Fruity Pebbles: Adding 1 cup of fruity pebbles to the syrup will help to make it flavorful.
-Sugar: 1 cup of granulated sugar will sweeten and thicken the syrup
-Salt: We just need 1/4 teaspoon of table salt to help enhance the flavors in this syrup.
-Food Coloring: We will need about 10 drops of neon purple food coloring to help our syrup stand out and color our cake. I used McCormick brand’s neon food coloring.
Cake
-Boxed Cake Mix: We need 1 box of white cake (15.25 ounce) to be the cake base. I used the Duncan Hines cake brand but you can use any.
-Egg Whites: 3 egg whites will help to keep bind our cake white.
-Water: One cup of water will add liquid to the cake so that it’s pourable.
-Oil: Baked goods need fats and oils to help stay moist so 1/3 cup of oil will do exactly that.
-Fruity Pebbles: Adding 1 cup of Fruity Pebbles into the cereal will speckle it with color like a confetti cake.
Topping
-Sweetened condensed milk: We need one 14 ounces sized can of sweetened condensed milk to make the cake sweet and moist.
-Whipped topping: We need an 8 ounce container of thawed whipped topping, I used the Cool Whip brand but you can use any similar ones.
-Fruity Pebbles: Topping the cake with another 1 cup of Fruity Pebbles will make it look as good as it tastes.
How to Make a Fruity Poke Cake
Add warm water and Fruity Pebbles to a 2 cup measuring cup and let steep for 20 minutes.
Prepare the white cake mix and pour it into a 9×13 baking dish according to the package instructions. Add in 1 cup of Fruity Pebbles and bake as directed.
While the cake is baking, prepare the syrup.
Strain your steeped cereal through a fine-mesh sieve into a saucepan.
Allow the mixture to sit for several minutes to allow the liquid to drain from the sieve. Do not squish the cereal through the sieve.
Add sugar to the pan of cereal water and then bring the mixture to a boil over medium-high heat. Let boil for 5 minutes.
Stir in the food coloring, and then set aside until you’re ready to assemble the cake.
While the cake is still warm, use the back end of the wooden spoon to poke holes throughout the cake.
Pour your sweetened condensed milk over the top of the cake and use a spatula to spread it out and help it to get into the holes you made.
Carefully pour the simple syrup over the top of the cake and the holes.
Spread your whipped topping over the top of the syrup and cover the cake.
Top it off with more Fruity Pebbles, but don’t do so until ready to eat so that the cereal doesn’t become soggy.
Serve immediately or store covered in the fridge until ready to eat. Enjoy!

- 1 cup Fruity Pebbles
- 1 cup granulated sugar

Cake
- 15.25 oz white cake mix

- ⅓ cup oil
- 1 cup Fruity Pebbles
Topping
- 14 oz sweetened condensed milk
- 8 oz whipped topping
- 1 cup Fruity Pebbles
Instructions
- In a 2 cup measuring cup, add warm water and Fruity Pebbles. Let steep for 20 minutes.
- Prepare white cake mix in a 9×13 pan according to box instructions. Add in 1 cup Fruity Pebbles and bake as directed.
- While the cake is baking, prepare the simple syrup by straining the steeped cereal through a fine-mesh sieve into a sauce pan. Allow to sit for several minutes to allow all liquid to drain. *Do not squish mushy cereal through the sieve*
- Add sugar to the pan with the cereal water. Over medium-high heat, bring to a boil. Boil for 5 minutes.
- Stir in food coloring. Set aside until ready to assemble cake.
- While the cake is still warm, use the end of a wooden spoon to poke holes all over the surface of the cake.
- Pour sweetened condensed milk onto cake, using a spatula to spread it out and help it get into the holes.
- Carefully pour the simple syrup evenly over the cake into the holes.
- Spread whipped topping over top of the cake.
- Top with Fruity Pebbles (Note: Do not top with the Fruity Pebbles until you are ready to serve, as they will become soggy.) Serve immediately, or store in the refrigerator until ready to serve.

How long is poke cake good for?
This fruity poke can stay covered in the fridge for up to 3 days. It’s best to enjoy it nice and fresh sooner rather than later as the cake will become soggy the longer it sits.
How many holes do you poke in a poke cake?
You can poke as many or as few as you would like to but I recommend having about 1 hole per 2 inches so that there’s enough to soak in the flavors throughout the entire cake. The more holes, the prettier it looks and the more flavor gets into every bite. But you don’t want so many holes closely packed together that it makes the cake hard to slice and serve.
