This fun homemade ice cream treat is an easy recipe that is so versatile. I love that this is a dairy free ice cream option, I have found as I have gotten older that I cannot handle dairy like I used to. This ice cream is made with a fruit jam as well, making it easy to swap out for another fruit option if you wanted to. Enjoying this delicious ice cream on a hot summer evening is so amazing, it cools you off and quenches your craving for a cool sweet treat.
Equipment needed
Ice cream maker: You will need an ice cream machine, I have a small one like this one from Amazon.
Dairy-Free Homemade Raspberry Ice Cream Ingredients
Coconut milk: For this recipe use 2 13-ounce cans of Thai Kitchen unsweetened coconut milk. If you place the cans in the fridge ahead of time to chill them, it makes the process faster.
Dairy free milk: Adding in ½ cup of any other dairy-free milk gives this treat great consistency. I used Silk Vanilla Soy for this recipe.
Sugar: You will need to add in ½ cup of sugar to sweeten this ice cream up a bit.
Raspberry jam: Using 1 cup of raspberry jam, divided in half, will give this ice cream amazing flavor. You can also use another flavor if raspberry is not your favorite.
Step by step how to make Raspberry Jam Ice Cream
Prepare mixture
In a large bowl, combine both types of milk, the sugar and just a 1/2 cup of the jam. Whisk to dissolve the sugar.
Procced to pour the mixture into the ice cream maker. Follow the directions on your ice cream maker to begin mixing, mine just requires the push of a button.
Ice cream maker
Then, let the ice cream maker agitate for about 15-20 minutes.
After that, pour the contents into a freezer-safe container and take the remaining 1/2 cup of jam and drizzle along the top of the ice cream. Using a knife, swirl the jam in and around to create a marbled effect.
Freeze
Put the mixture into the freezer and freeze until solid, about 4-5 hours.
If desired, top with a little more jam or fresh fruit even.
Serve cold and enjoy!
