I found this lovely little recipe in an old Taste of Home cookbook. I adore the simplicity of it! I modified it so the cream is almost like a mousse- but with less work. Top it with whatever sweet fruit you have on hand. I think it’d be delicious with peaches and blueberries as well! Scroll down to see a video on how it all comes together.
Fruit Topped Almond Cream
- 1 3.4-oz box French Vanilla Pudding mix
- 1 1/2 cups milk
- 1 cup heavy whipping cream
- 1 1/2 tsp almond extract
- 3 cups sliced fresh fruit {I used strawberries, blueberries and kiwi}
- sliced almonds, for topping
Whisk together pudding mix with the milk and set aside.
Mix heavy whipping cream and extract for about 5 minutes, until stiff peaks form.
Give pudding another whisk to make sure it’s smooth, then combine cream and pudding. Let sit in the fridge for about 10-15 minutes.
Spoon or pipe cream into small bowls, then top with fresh fruit and sliced almonds. Yields 8 servings.
