Sometimes you need to make a treat very quickly! This chocolate bark recipe is a favorite in my family and I love that you only need three ingredients, all of which I usually have on hand. During the holiday season, I love to make all kinds of different homemade candies to give to neighbors and friends. Some of the candy I make is more complicated, but it’s nice to have a few recipes that only take a few minutes to help fill up the goody plates.
MARSHMALLOW PEANUT BUTTER CHOCOLATE BARK
This simple chocolate bark is made with chocolate chips, peanut butter and marshmallows. Use a microwave to melt the chocolate and mix the other ingredients in. Spread it in a pan and let it set up in the refrigerator for about 20-30 minutes before cutting into pieces. That’s it! One of easiest candy recipes to make, and everyone loves it!
Ingredients in Marshmallow Peanut Butter Chocolate Bark
Chocolate chips – You will need one bag of semi-sweet chocolate chips to melt down for the bark. We prefer semi-sweet, but you can use any type of chocolate that you’d like and any brand of chocolate chip. As long as you melt 12 ounces of some type of chocolate, the recipe will work!
Peanut butter – Adding just 2 tablespoons of peanut butter adds a ton of peanut butter flavor to the bark. If you’re allergic, you can leave it out and the bark will still turn out fine!
You can also swap out the peanut butter with crunchy peanut butter or any other type of nut butter – almond butter works great too and adds a completely different flavor.
For best results, use a regular peanut butter as opposed to one that is more natural. The bark will still work, but may not set up as well since more natural peanut butters tend to be a little runnier.
Miniature marshmallows – The recipe calls for 1 cup of miniature marshmallows, but you can definitely add more, even up to about 3 cups. We love marshmallows!
How to make Marshmallow Peanut Butter Chocolate Bark
Line an 8X8 pan or a half-sized cookie sheet with parchment paper or grease it with non-stick cooking spray. If you use the half-sized cookie sheet, the bark will be a little bit thinner.
In a large bowl, melt the chocolate chips in the microwave in 45-second intervals, stirring in between each interval until the chocolate is smooth.
Add the peanut butter to the chocolate and stir until well combined.
Stir in the marshmallows.
Transfer the mixture to your prepared pan. Using a rubber scraper, make sure you can press the chocolate down slightly to make it all somewhat even.
Put in the fridge for about 20 minutes, until chocolate is set. Cut into pieces and keep them refrigerated until ready to serve.

WHY DOES CHOCOLATE SEIZE?
Melting chocolate can be a little frustrating if you’ve never done it before. The reason is because chocolate can seize easily if it gets too hot. The most common culprits are water and overcooking. I don’t EVER use water to help chocolate melt. When chocolate seizes due to overcooking, it actually looks like it’s not melted yet, which prompts people to return it to the microwave and makes the whole thing worse. The result is a clumpy, grainy mess!
HOW TO PREVENT CHOCOLATE FROM SEIZING:
- The key is to melt the chocolate SLOWLY. Make sure to stir after each interval in the microwave. Sometimes the chocolate won’t look completely melted, but as you stir, it continues to melt.
- Add a small amount of shortening to the chocolate. This is completely optional and the chocolate will melt without it, but it does thin it out a little bit and the shortening helps to smooth it all out. If your chocolate is showing beginning signs of seizing, melt 1/2 tsp shortening in a separate bowl and gently stir into your chocolate. If it’s smoothing out, you can add another 1/2 tsp of shortening.
HOW LONG DOES CHOCOLATE BARK LAST?
You can leave the chocolate bark at room temperature for up to 4-5 days, but I like to store mine in the refrigerator so that the chocolate doesn’t melt!
The bark will be good in the refrigerator for about 2-3 weeks if stored in an airtight container.
If you want to make the bark in advance and freeze it, that works well too! This chocolate bark recipe is good for up to about 3-4 months in the freezer. Make sure the bark is completely set up and chilled and then cut into pieces before freezing. Place each piece on a tray and freeze for about 30 minutes before placing all the pieces in a Ziplock bag or airtight container. This will prevent the pieces from sticking together.
