The Best Chicken Corn Chowder
This filling soup recipe is one you’ll want to pass down for generations- it’s that tasty! It’s versatile and easy which just gives you more reasons to love it. Make it a little different every time and tweak it to your own tastebuds and I’m sure you’ll never forget his creamy good chowder recipe.
Corn Chicken Chowder Ingredients:
-Bacon: You will need 6 slices of bacon, you can use any brand or type that you prefer but remember to save the bacon drippings for the soup!
-Onion: We use ½ cup of a diced onion to add flavor. You’re welcome to use dehydrated onion to save time!
-Celery: To help flavor the soup, you’ll want ½ cup of diced celery (this is about 2 stalks).
-Garlic: this recipe uses 1 tablespoon of minced garlic.
-Flour: Adding ¼ cup of all-purpose flour will help to thicken the broth and make the chowder thicker.
-Chicken broth: The base of our soup is 4 cups of chicken broth. You can use regular or low sodium versions depending on preference.
-Corn: You’ll need 2 cups of corn. You can use canned, frozen, or cut the kernels off of 4 cobs of corn.
-Creamed corn: To help make the soup nice and creamy, use a 15 ounce can of creamed corn.
-Chicken: We’ll want to use about 2 cups of cooked and diced chicken. This is approximately 2 breasts, but you could also save time by using a rotisserie chicken.
-Potatoes: To give our chowder some starch and filling goodness, you’ll want to use 1 pound of diced potatoes. I like to use red potatoes, but any potato will work fine.
-Smoked Paprika: To add delicious flavor, you’ll want to use 1 teaspoon of smoked paprika, but regular paprika could be used too.
-Thyme: Add in 1/2 teaspoon of fresh or dried thyme to give our soup an earthy feel.
-Heavy Cream: Make your chowder creamy and rich with 1 cup of heavy cream. You could also use sour cream if you don’t have whipping cream on hand.
-Cheeses: Add in ½ cup each of cheddar cheese and mozzarella.
-Butter: 2 tablespoons of butter will give our soup a nice richness in taste.
-Chives: Adding in 1 teaspoon of minced chives will give a lot of delicious flavors.
-Salt and Pepper: Add these seasonings to taste depending on your preferences.
How to make corn and chicken chowder
Cook your bacon in a large pan and then remove slices and chop. Reserve the bacon grease in the pan and add in the onion, celery, and garlic. Cook for 5 minutes.
Add in the onion, celery, and garlic. Cook for 5 minutes.
Add in the flour, and brown slightly. Stir in the chicken broth until there are no lumps.
Add in the creamed corn, canned corn, potatoes, chicken, smoked paprika, and thyme. Stir to combine.
Cook until the potatoes are fork-tender, this should take about 20 minutes.
Add in the heavy cream (or sour cream), cheeses, and butter. Stir together until smooth.
Taste the soup and add salt and pepper to taste.
Serve your chowder with Easy Garlic Rolls or No Knead Artisan bread. Enjoy!

- 1 cup heavy cream
- ½ cup cheddar cheese shredded
- ½ cup mozzarella cheese
- 2 TBSP butter
- 1 teaspoon chives minced
Instructions
- In a large pan, cook the bacon, then remove and chop. Save the bacon grease in the pan and add the onion, celery and garlic. Cook for 5 minutes.
- Add the flour and brown slightly. Add the chicken broth and stir until there are no lumps.
- Add the creamed corn, canned corn, potatoes, chicken, smoked paprika, and thyme. Stir to combine.
- Cook until the potatoes are fork tender, about 20 minutes.
- Add the cream, cheddar cheese, mozzarella and butter. Stir until smooth. Taste and add salt and pepper accordingly. Enjoy!

Can I make corn chowder in advance?
Yes! You can make this soup when you want and simply reheat it to serve when you want to eat. This soup will keep for up to 5 days in a covered pot in the fridge giving you plenty of time to use it up. You can also freeze it in an airtight container for up to 3 months.
How to make corn chicken chowder in a slow cooker
This can also be made in a slow cooker. In a saute pan, cook the bacon and crumble. Set the bacon aside. (If you are using raw chicken, cook the chicken till browned in the bacon grease, then remove. It will continue to cook in the slow cooker.) Add the onion, celery, garlic and cook for 5 minutes. Add the flour to the vegetables. Add all the ingredients from the pan into the slow cooker. Add the chicken and chicken broth and stir till smooth. Add the creamed corn, frozen/canned corn, chicken, potatoes, paprika, thyme, and a dash of salt and pepper. Cook on high for 2 hours, or low for 4 hours. Fifteen minutes before serving, add the cream, butter, the cheeses, and half the bacon pieces. Serve each both with chives and bacon.
