BARBECUE BEEF BISCUIT CUPS
Barbecue Biscuit Cups are perfect for a summer potluck appetizer. If you eat a couple of them, they can work as a main dish too! Refrigerated biscuit dough is filled with ground beef that is seasoned with BBQ sauce, onion and brown sugar and then topped with cheese. Bake them for about 10 minutes and then they are ready to eat!
WHAT TO SERVE WITH BBQ BEEF BISCUIT CUPS?
BBQ Beef Biscuit Cups make a great appetizer for a barbecue or potluck. We like to eat them as a main dish. They go really well with sides like Creamy Parmesan Potatoes and Peas, Sugared Asparagus, or Orange Cream Fruit Salad. My family loves when I serve this with Baked Sweet Potato Fries or Pepperjack Mac & Cheese as well! And don’t skip dessert! Have some Peanut Butter Chocolate Chip cookies or some Texas Sheet Cake for the perfect ending to your meal.
Ingredients in BBQ Beef Biscuit Cups
Ground beef – You will need a pound of ground beef. You can use any type of ground beef, or you can even use ground turkey instead if you prefer.
BBQ sauce – Only a half cup of your favorite BBQ sauce will flavor the beef perfectly.
Onion – You only need a tablespoon of finely minced onion. I usually keep chopped onions in the freezer – they work great, but you’ll want to chop them up a little bit more for this recipe. You can also use dried onion if you’d like.
Brown sugar – Only two tablespoons of brown sugar will add a little more flavor and a little bit of extra sweetness to the BBQ sauce.
Biscuits – You will need an 8-ounce package of biscuits. These can be found in the refrigerator section of the grocery store. An 8-ounce package has 10 biscuits in it.
Cheddar – About 3/4 cup of cheddar cheese is all you need to sprinkle a little bit of cheese on top of each muffin cup. You can use a different type of cheese if you’d like.
How to make BBQ Beef Biscuit Cups
Preheat oven to 350°.
Brown beef in skillet. Add BBQ sauce, onion and brown sugar to the beef and stir to mix completely.
Place each biscuit in a greased muffin cup and press dough up the sides of the cup. The dough won’t go up all the way, but try to press it about halfway up each cup.
Spoon meat mix into each cup. Sprinkle with cheese. Bake for 10-12 minutes or until muffins begin to lightly brown.

- 2 Tbsp brown sugar
- 8 oz pkg. refrigerator biscuits
- ¾ cup shredded Cheddar cheese

WHAT BBQ SAUCE IS BEST FOR CROCK POT PULLED PORK?
In the past, I have usually used Sweet Baby Ray’s BBQ sauce, but I’ve been trying some others lately. Costco has been carrying the Kinder’s brand which I really love because it is organic, has much cleaner ingredients, and I actually think it tastes so much better than many of the other varieties that I’ve tried. I prefer the Mild BBQ flavor, but they have some varieties that have more kick to them if you like spicy!
Blues Hog has a reputation of having some of the best BBQ sauce out there, but I have actually never tried it. It is also made with all natural ingredients and there are quite a few varieties to try!
What type of biscuits to use for BBQ Beef Muffin Cups?
Pretty much any type of refrigerated biscuit will work for this recipe. I usually just use the regular Pillsbury biscuits, but you can use the Jumbo ones if you prefer. You may need to cook those a little bit longer unless you press the dough higher up on each muffin cup. If you use regular biscuits, there should be 10 in each container.
Can you use BBQ Chicken or pork instead of beef?
You can absolutely make this recipe with barbecue chicken instead of beef. You can use our favorite Crockpot Pulled BBQ Chicken recipe and then fill the biscuit cups with that instead.
