How to Cook Flank Steak
The best way to grill a flank steak is to start with a good marinade. Steak marinade usually consists of an acid, like the red wine vinegar and soy sauce, oil and some flavor. I love the flavor that garlic and ginger give to this steak. Place all of the marinade ingredients into a large plastic container or zip top bag and stir to combine. Add the steak and allow to marinade for 30 minutes up to 6 hours. The longer the steak is in the marinade, the longer it will pick up the flavors.
I usually plan on 2 hours when using this marinade, but you can definitely go longer if you are preparing this in the morning for dinner that evening. When you are ready to grill, simply remove the steak from the bag and allow the excess marinade to run off into the bag before placing on the hot grill.

How to Grill a Flank Steak
After you have allowed your flank steak to soak up all of those delicious marinade flavors, you are ready to hit it will some heat and cook it to grilled perfection. Turn the grill up to high heat and place the steak directly on the grates. Allow the steak to cook for 5-7 minutes on each side, flipping once.
How Long to Cook Steak
I like to cook my flank steak to medium, so it is still a little pink in the middle. This takes about 7 minutes on each side with the grill on high. I highly recommend using an instant read thermometer to make sure your steak cooks to the correct doneness. My all-time favorite meat thermometer is the Thermapen. It’s super fast and incredibly durable. Another great meat thermometer is the ThermoPop which is a more basic version that works just as well!
If you are wanting your steak to be rare, pull your steak off the grill when it reaches 120-125ºF, medium rare 125-135ºF, medium 135-145ºF, medium well 145-155ºF and well done 155ºF.
Flank steak cooks quickly, so keep an eye on it if you want it more rare. Once the steak has reached your desired doneness, remove from the grill and allow to rest for 10-15 minutes. Resting allows the juices to redistribute in the steak, keeping it nice and tender, and not run all over your cutting board.
How to Slice a Flank Steak
Now that your flank steak is cooked to perfection and rested, it is ready to impress!! To slice your flank steak, you will cut it against the grain. This means that you will cut it in the opposite direction in which the muscle fibers are running. If you look at the steak you can see the lines going from top to bottom when the steak is laying on the cutting board. Slice the steak from one side to the other going across the grain. This will keep the steak tender, you don’t want to cut with the grain or you will be chewing all night to try and break the meat up.
Now that you have marinaded, grill and slice your flank steak, you are ready to eat and enjoy!!
