I love my slow cooker and I love recipes that only have 3 ingredients! This BBQ chicken recipe is one that the whole family will love and it really couldn’t be any easier to make. It only takes a few minutes in the morning to combine the ingredients and then everything will be ready when you are at dinner time!

The name of the recipe gives the whole recipe away! This shredded chicken is made with root beer and barbecue sauce in a slow cooker! Perfect for BBQ chicken sandwiches or as a simple entree to serve over rice.
WHAT TO SERVE WITH BBQ Chicken?
BBQ sandwiches go really well with sides like Creamy Parmesan Potatoes and Peas, Sugared Asparagus, or Orange Cream Fruit Salad. My family loves when I serve this with Baked Sweet Potato Fries or Pepperjack Mac & Cheese as well! And don’t skip dessert! Have some Peanut Butter Chocolate Chip cookies or some Texas Sheet Cake for the perfect ending to your meal.
Ingredients in Slow Cooker Root Beer BBQ Chicken
Chicken breasts – You will need about 3 pounds of thawed chicken breasts. You can also use chicken tenders if you prefer, and then the cooking time can be reduced by about an hour or two.
Salt and pepper – Just sprinkle a little bit of salt and pepper on the chicken before cooking for a little extra flavor.
BBQ sauce – You can use any type of BBQ sauce that you prefer. You’ll need 1.5 cups of sauce.
Root beer – You will need 1 cup of root beer. Any brand will work, but just make sure you don’t use diet soda!
How to make Crockpot BBQ Chicken
Spray slow cooker with nonstick cooking spray. Place chicken in slow cooker and lightly season with salt and pepper. Pour barbecue sauce and root beer evenly over the chicken.
Cook on high for 3-4 hours or low for about 7-8 hours. When done, chicken should fall apart easily when shredded with 2 forks. Once the chicken is shredded, cook for another 20 minutes before serving. Serve with rice or on a bun.

WHAT BBQ SAUCE IS BEST FOR BBQ CHICKEN?
In the past, I have usually used Sweet Baby Ray’s BBQ sauce, but I’ve been trying some others lately. Costco has been carrying the Kinder’s brand which I really love because it is organic, has much cleaner ingredients, and I actually think it tastes so much better than many of the other varieties that I’ve tried. I prefer the Mild BBQ flavor, but they have some varieties that have more kick to them if you like spicy!
Blues Hog has a reputation of having some of the best BBQ sauce out there, but I have actually never tried it. It is also made with all natural ingredients and there are quite a few varieties to try!
What kind of root beer to make Slow Cooker Root Beer BBQ Chicken?
You can use any brand of root beer, as long as you make sure it isn’t diet! I usually just use A&W, Barq’s or IBC…whatever I have on hand.
HOW LONG DOES IT TAKE TO SLOW COOK CHICKEN?
When you cook chicken breasts in a slow cooker, how long you cook it for depends on how large the chicken breasts are, or if they are frozen or not. I like to use thawed chicken breasts for this recipe and I cook them in a slow cooker on LOW for at least 7-8 hours. You can cook it on HIGH for 3-4 hours, but I think the texture and flavor is better when you cook the chicken on low. If you are starting with frozen chicken breasts, add about another hour on to your cooking time.
How to make BBQ Chicken in an Instant Pot
I’ve also begun making this in my Instant Pot and it’s AMAZING. It’s quite a bit faster than using a Slow Cooker (it only takes about 30 minutes total!) and I think I like the results even more!
Place everything in the Instant Pot and set to Manual High Pressure for about 10 minutes for thawed chicken and about 15 minutes if the chicken breasts are frozen. When the time is up, let it Natural Pressure Release. At least let it NPR for 5 minutes before releasing the valve, or just wait until all of the pressure is released if you have the time. Once all the pressure is released, the chicken should be super tender and fall apart easily!
