Cheesy soup recipe
This simple soup recipe packs a lot of flavor with minimal ingredients. Using carrots, onion, and celery we get an aromatic base of veggies, and using simple spices we can make the dish well seasoned. What really makes this cheese soup unique is the blend of cheese we have going on as each one packs its own flavor profile. Top it off with some cooked bacon and scallions and you’ll swear you’re in heaven.
Three cheese soup ingredients
-Onion: You will need ¼ cup of diced onion to help create a depth of flavor and rich-tasting base for this soup.
-Butter: 3 tablespoons of butter will help to act as the needed fat for the roux.
-Flour: Use ¼ cup of flour as the soup thickener in your roux.
-Seasonings: You will want to use ¼ teaspoon of salt and ⅛ teaspoon of black pepper and garlic powder to help flavor this soup well.
-Milk: Use 2 cups of milk to give us a nice tasting base.
-Chicken broth: Add in 14.5 ounces (one can) of chicken broth to help flavor the soup base.
-Veggies: Use ½ cup each of diced carrots and chopped celery as they are aromatics and really help to bring out the best flavors in soups.
-Cheeses: You will need 1 ½ cups of shredded cheddar cheese and ¾ cups each of Monterey jack and swiss.
-Garnishes: Use chopped cooked bacon and scallions as a garnish for this dish (if desired).
-Bread buns: You’ll need about 4 bread buns to make into bowls for this soup. Use regular bread buns, sourdough, or pretzel flavored bread depending on what you’ll prefer.
How to make three-cheese soup
Saute the onion and butting in a large saucepan until tender.
Add in the flour, salt, pepper, and garlic powder. Whisk until smooth.
Slowly add in the milk, whisking over medium heat until the mixture is thickened and bubbling.
In a small saucepan, bring the chicken broth, carrots, and celery to a boil for 10 minutes until the veggies are tender.
Add the broth mixture to the milk mixture and whisk together to combine.
Remove the pan from the heat and use an immersion blender to puree the soup until it’s smooth.
Place the pan back on the stove over medium heat and stir in all of the cheese until melted.
Hollow out your bread bowls and add soup to each one.
Serve hot, topped with more cheese, scallions, and bacon. Enjoy!

Ingredients
- ¼ cup onion chopped fine

Instructions

- Add in the flour, salt, pepper and garlic powder, whisk until smooth.
- Gradually add in the milk whisking over medium heat until thickened and bubbling.
- Meanwhile in a small saucepan bring to a boil the chicken broth, carrots and celery for 10 minutes or until vegetables are tender.
- Add the broth mixture to the milk mixture and whisk to combine. Remove pan from heat.
- Using an immersion blender puree the soup until smooth.
- Place the pan back on medium heat and stir in all the cheese until they are melted.
- Hollow out your bread bowls and add the soup to each one. Top with more cheese, scallions and bacon for garnish. Serve & enjoy!
