Sausage Potato Boats are an easy weeknight dinner made with juicy sausages topped with buttery mashed potatoes and lots of cheese! Simple & flavorful meal!
Sausage Potato Boats recipe is sponsored by Johnsonville Sausage. All opinions are 100% mine. This is one of the easiest weeknight meals ever! I first began making these over 20 years ago. It’s a great way to use up leftover mashed potatoes. The cheesy potatoes go so well with flavorful sausages- try it and you’ll see!
I cooked the sausages using the new Johnsonville Sizzling Sausage Grill. It’s an indoor grill made specifically for cooking sausages and you won’t believe how easy it is to use! There’s a “quick-start” guide included and you don’t preheat the grill, so we were literally cooking sausages within minutes of taking the grill out of the box! You can cook 1 to 5 sausages in under 15 minutes in the enclosed electric grill. (Enclosed means less clean-up!) I love that there’s an internal temperature probe so that it stops cooking them at just the right temp. Our sausages were perfectly browned and so juicy! Clean-up was a breeze and I was so impressed with how easy it all was.

This recipe for Sausage Potato Boats is perfect for a busy weeknight meal or even a holiday appetizer. I served them whole for dinner, but cut each sausage at an angle in fourths and you’ve got a delicious appetizer.
You can make this meal come together really fast with these tips:
- Use the Sizzling Sausage Grill to cook perfect sausages in under 15 minutes!
- Use instant mashed potatoes- done in under 5 minutes! Another idea is to use leftover mashed potatoes from dinner a previous night.
- Purchase pre-shredded cheese from the refrigerated section of your grocery store.

I used smoked sausages, cooked them in a pan then sliced them. I don’t have a sausage cooker. This was good, but the potatoes need a kick, they are quite bland with only the cheese. Next time I will doctor up the potatoes some.
