What are lemon poppy seed muffins?
Lemon poppy seed muffins are soft and tender muffins that pack a lot of flavor in every bite. With poppy seeds, lemon zest, lemon juice, and lemon icing on top every bite is as good (if not better) than the last. We also add greek yogurt into the batter to make these muffins even better by keeping them moist and fabulous. Perfect for any occasion.
Lemon poppy seed muffin ingredients
For the muffins, you will need:
-Flour: We need 1 1/3 cups of all-purpose flour for the gluten base of these muffins.
-Leavening agents: Using 1/2 teaspoon of baking powder and 1/2 teaspoon of baking soda we can get a good rise out of the muffins so that they’re fluffy and delicious.
-Salt: Just 1/2 teaspoon of salt is enough to enhance the flavors in these muffins and make them taste great.
-Butter: We need 1/4 cup (half a stick) of softened butter to help give our batter a good richness in every bite.
-Sugar: We need 3/4 cups of granulated sugar to help sweeten the muffins.
-Eggs: 2 eggs at room temperature will act as the binder for these muffins so they aren’t too crumbly.
-Vanilla: With 1 teaspoon of the vanilla extract we can enhance the flavors in these muffins.
-Lemon: We need the zest from one lemon and 2 tablespoons of lemon juice to get a great burst of fresh lemon flavor.
-Greek Yogurt: Adding 3/4 cup of Greek yogurt into the batter will thicken it up but help the muffins to turn out light and fluffy.
-Poppy seeds: We only need 2 tablespoons of poppy seeds to help us speckle these muffins with flavor and seeds.
For the icing, you will need:
-Powdered sugar: We need 1 cup of powdered sugar to give us a sweet and creamy icing for every muffin.
-Lemon juice: 2-3 tablespoons of lemon juice will thin down the icing to the perfect consistency while adding flavor.
-Optional add-ins: You can add in some lemon zest or top the muffins off with additional poppy seeds for sprinkling if desired.
How to make lemon poppy seed muffins
Preheat your oven to 350 degrees F and line a muffin pan with cupcake liners. Set aside.
Whisk together the flour, baking soda, baking powder, and salt in a medium sized bowl.
In a large bowl, cream together the butter and sugar.
Add in the eggs, and mix again.
Beat in the yogurt, lemon zest, juice, and vanilla.
Add the dry ingredients and mix again until just combined.
Stir in the poppy seeds.
Fill each muffin cup about 2/3 full with batter.
Bake in the oven for 12-15 minutes or until a toothpick can be inserted and come out clean.
Allow your muffins to cool on a wire rack.
For the icing, whisk the ingredients together until smooth and then drizzle or pipe the icing on top of each cooled muffin.

Lemon Glaze
- 1 cup powdered sugar
- 2-3 tablespoons lemon juice
- optional: lemon zest poppy seeds for sprinkling
Instructions
- Preheat oven to 350°F. Line a muffin pan with cupcake liners.
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
- In a large bowl, beat the butter and sugar. Mix in eggs. Beat in the yogurt, lemon zest, juice, and vanilla.
- Add dry ingredients to wet ingredients and mix until just combined. Stir in poppy seeds.
- Fill the muffin tins about 2/3 full with the batter. Bake for 12-15 minutes, until an inserted toothpick comes out clean. Allow to cool on a wire rack.
- For the icing, whisk the ingredients together until smooth. Using a teaspoon or a piping bag, drizzle the icing over the cooled muffins. Sprinkle with additional zest and poppy seeds.

Can you freeze lemon poppy seed muffins?
Yes, these muffins can be frozen. Simply place them in an airtight container and freeze for up to 3 months. Thaw before eating by placing a muffin (or more) on the counter for about 30 minutes to come to room temperature.
What can I use as a substitute for Greek Yogurt?
If you don’t want to use plain Greek yogurt, you can choose to use sour cream and get a similar end result. You shouldn’t try to use regular yogurts though as those have a much higher sugar and water content that will throw off the wet: dry ratio in this recipe.
