Italian Chicken Skillet is the perfect one-dish meal that can be made in less than 30 minutes! Perfect simple and healthy dinner recipe full of chicken, tomatoes, spinach and mozzarella.
Dinnertime is always a little bit crazy at my house, so the faster I can make dinner, the better! This Italian Chicken Skillet is fast, healthy and absolutely delicious! And the fact that dinner can be made in one pan makes whichever kid is on dish duty extremely happy.
I love meals that just have a few simple ingredients and this Italian Chicken Skillet is definitely one of those. Packed with protein, low in carbs and it tastes good too!
Ingredients in Italian Chicken Skillet
Chicken breasts – You’ll need 1 1/2 lbs of chicken cut into thin bite-size strips. You can use chicken thighs instead if you prefer.
Olive oil – You’ll need just a couple of tablespoons to cook the chicken. You can use a different type of oil, but I really love the taste (and health benefits!) of olive oil.
Salt – Just a little bit of salt to season the chicken.
Ground black pepper – Just a pinch adds a lot of flavor to the chicken.
Diced tomatoes – You just need one 14 ounce can, but make sure you get the kind with basil, garlic and oregano. If you just have the regular kind, then add in about a teaspoon of each of those spices to add more flavor to the recipe.
Fresh basil – Adds some color and flavor to the recipe. You can leave it out or use dried basil instead, but I love fresh basil in this dish!
Fresh spinach – The easiest thing to do is just buy a 10 ounce bag of pre-washed, fresh spinach so you can just dump it in.
Mozzarella – You’ll need a cup of shredded mozzarella cheese. You can also use an Italian blend if you prefer.
How to make Italian Chicken Skillet
In a 12-inch skillet, cook chicken half at a time, in hot oil over medium-high heat until no longer pink; drain off fat. Return all chicken to skillet. Sprinkle chicken with salt and pepper.
Add drained tomatoes and fresh basil to skillet. Bring to boiling. Gradually add spinach to skillet, tossing with tongs just until spinach is wilted. Remove from heat. Sprinkle with cheese. Let stand for 3-5 minutes until cheese melts.

- 1/4 tsp salt
- 1/8 tsp ground black pepper
- 14 1/2 oz can diced tomatoes with basil garlic and oregano, drained
- 2 Tbsp fresh basil
- 10 oz pkg pre-washed fresh spinach
- 1 cup shredded mozzarella

What type of chicken to use in the Italian Chicken Skillet recipe?
I usually use chicken breasts in this recipe, but you can also cut up chicken tenders or chicken thighs if you prefer. If you really want to shorten the cooking time for the recipe, you can just use one tablespoon of oil in the pan and throw in 1 1/2 pounds of rotisserie chicken (already cooked) just until it’s warmed up. Then proceed with the rest of the recipe as written.
