I have been stressing out lately because my son doesn’t eat enough fruit and vegetables. I have been trying to think of ways to make him eat fruit. My husband and I have a fruit smoothie every night or so, and I thought, what if I turned it into a Popsicle?
The results were truly successful. I made an extra smoothie and poured it into the popsicle molds. My son was surprised when I said he could have a popsicle for breakfast. He chowed it down, and I feel better knowing my son was eating fruit and vegetables.
Green Smoothie Popsicles
While these popsicles may not be “green” in the color sense of the word, they are green in that they contain spinach, which is a healthier leafy green. We often refer to smoothies with spinach or kale as a “green smoothie” because of this added ingredient. While it doesn’t change the flavor too much, it can change the color sometimes (depending on the other colors in the drink), and it also packs a lot of great nutrition, like iron, into every sip.

Healthy Smoothie Popsicles Ingredients
Apple juice– You will need 1 cup of apple juice to give the remaining ingredients some liquid to help with the blending so that it’s not too thick.
Spinach– Add in 1 cup of spinach. You can use fresh or frozen spinach, depending on what you have on hand.
Strawberries– Add in 1 cup of fresh or frozen strawberries.
Blueberries– Using 1/2 cup of fresh or frozen blueberries will give you a nicer color to your smoothies as well as add in some antioxidants and vitamins.
Pear– Use 1 fresh or frozen pear to add a little more fiber and sweetness to your popsicles.
How to Make Fruit Smoothie Popsicles
Add all of the ingredients to your blender.
Secure the lid and press the blend button. Continue to blend the smoothie ingredients together until it looks well combined and there are no large chunks.
Divide and pour the smoothie into several popsicle molds and secure the sticks so they’ll be easier to grip and serve when ready.
Allow adequate time for freezing. I recommend overnight, but it should be solid enough to serve in about 4 hours.
Gently remove the popsicles from the mold and serve.

How long does it take for fruit popsicles to freeze?
These popsicles can take anywhere from 4 to 8 hours to freeze until solid, and this truly depends on few different factors, including the cold temperature of your freezer and the temperature of the ingredients you used if you had apple juice from the cold fridge and used frozen strawberries, blueberries, etc. Then the smoothie would already be very chilled once blended and poured, so it would take a little less time to freeze than one that used room temperature ingredients.
Can popsicles get freezer burn?
Like most anything that gets frozen, ice crystals can form over time either because they’ve been frozen for too long or they were stored improperly. If you are constantly freezing, thawing, and refreezing popsicles, then ice crystals will most likely form. There is nothing wrong with these crystals, although they can be unpleasant and reduce some of the overall flavors from your frozen treat.
How to remove popsicles from the mold
I always recommend using a silicone mold because they’re a little easier when it comes to removing popsicles. Different materials can require more or less effort. To thaw and remove popsicles from the mold, place the mold on the counter for 5-10 minutes at room temperature. This should soften them enough to be pulled but if not, carefully run the bottom of the mold under running cool/warm water, just enough to wiggle the popsicles free. Careful not to drop the popsicles or melt them too much.
