What is peach galette?
A galette is almost like a pie, but a little easier to make. You make a simple pie crust recipe but just fold the edges over the filling. No need to crimp or make anything look perfect, yet the dessert ends up looking beautiful because you can see the peach filling in the middle.
Time saving tips for making Easy Peach Galette
This galette recipe comes together quickly, but there are a couple ways to save even more time and make things even easier!
- I like to use a homemade pie crust (simple recipe below), but I often use a store-bought one to save on time.
- I love using fresh peaches and I think the galette turns out better that way, but you can use sliced, canned peaches if you prefer. Just make sure to drain them well before using, and you may not need to add the sugar if the peaches have already been sweetened up.
WHAT IS THE EASIEST WAY TO PEEL PEACHES?
It’s easy to just cut the skin off of peaches if you only need one or two, but if you are planning to remove the skin from a lot of peaches, there is an easier way!
- Boil a pot full of water
- Immerse ripe peaches for 30-60 seconds.
- Remove from water. You can submerge the peaches in cold water, but if you’re planning on cooking the peaches anyways, it’s not necessary and eliminates a step, making the process faster.
- Pinch the skin to break it and slide it off the peach.
- Cut the peach in half and remove the pit.

Ingredients in Easy Peach Galette
Pie crust – You can use a store-bought pie crust or you can make your own. Use your favorite recipe or use the simple recipe found below. If you use a store-bought crust, make sure to use the kind that is rolled up in a box in the refrigerated section, so that you can shape it the way that you need to. You don’t want the kind that is already formed in a pie tin!
Peaches – You will need 6-7 peaches, peeled and sliced. Check out our favorite way to peel peaches quickly right here!
Granulated sugar – Just a half cup of sugar will help to sweeten up the peaches for the galette filling.
Flour – You will need 2 tablespoons of flour to help thicken up the filling. You can swap this out with cornstarch, but if you use cornstarch, you will only need 1 tablespoon.
Ground cinnamon – Two teaspoons of ground cinnamon adds the most perfect flavor to the peaches.
Egg – Beat one egg to use to brush over the edges of the galette. This will create the perfect consistency for the crust.
Sugar for garnish – Sprinkle some sugar on the egg-washed crust for a little extra sweetness.
How to make Easy Peach Galette
Preheat your oven to 350°.
Line a baking sheet with parchment paper and set aside.
In a mixing bowl, gently toss together the sliced peaches, sugar, flour, and cinnamon until evenly coated.
Place the pie crust dough in the center of your lined baking sheet.
Spoon the peach filling into the center of the pie crust dough and fold the edges of the pie dough inward, leaving a large hole in the center to allow steam to escape while baking.
Use a pastry brush to lightly brush the edges of the galette with the beaten egg.
Sprinkle the egg-washed pie dough generously with sugar, then place the galette into the oven.
Bake for 25-30 minutes, or until the edges of the galette are golden brown and the center is set.
Allow to cool for at least 10 minutes, then serve warm or room temperature with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.

More tips for making the perfect Peach Galette
- The peach filling will thicken upon cooling, so don’t worry if it doesn’t seem thick enough at first.
- If you’re worried about the bottom of the galette becoming soggy, you can brush the top with egg wash and sprinkle it with almond flour or cornmeal before spooning the peach filling overtop.
- A galette isn’t supposed to be perfectly shaped! Have fun and enjoy your rustic creation. It’ll taste amazing regardless of the presentation.
How long is Peach Galette good for?
Like most pies, I think that peach galette tastes best warm. If there is any left, cover or store leftovers in the fridge for 3-4 days, or store at room temperature for 1-2 days.

This recipe makes 2 crusts, so you can make 2 different types of pie or you can make two galettes and share one!
Ingredients in pie crust recipe:
- 2 cups flour
- ½ teaspoon salt
- ⅔ cup very cold butter
- 6-7 tablespoons ice water
How to make homemade pie crusts:
- In a mixing bowl, whisk together the flour and salt.
- Cut or grate the butter into the flour mixture and combine with a pastry blender or fork until crumbly.
- Add in the ice water a tablespoon at a time, until a dough forms.
- Separate the dough into 2 equal portions and shape into discs.
- Wrap and refrigerate the pie dough discs for a minimum of 30 minutes or up to 5 days before rolling out and using.
