Strawberries: Using 4 cups of fresh strawberries, divided, will give this berry pie amazing flavor and a beautiful appearance too.
Sugar: Add in ¾ cup of sugar to make this cream pie perfectly sweet.
Gelatin: To help thicken up the filling, you will need 1 packet of unflavored gelatin (2 ½ tsp).
Water: Use ½ cup of cold water to dissolve the gelatin in and help create a great pie consistency.
Heavy whipping cream: You will need 1 ¼ cup of heavy whipping cream for the creation of the stabilized whipped cream.
Almond extract: Adding ½ tsp of almond extract will give the filling amazing flavor.
Step by step on how to make Easy Strawberry & Cream Pie
Prep
Start by washing, de-stemming and slicing 3 cups worth of fresh strawberries. Then toss them with the sugar in a bowl and let sit for 10 minutes, stirring every couple minutes, until sugar is dissolved.
Pie filling
In a small saucepan, add the cold water and then sprinkle in the gelatin and let sit for 1 minute. Turn on medium heat and cook mixture for 3-5 minutes, whisking to help the gelatin to dissolve.
Remove the mixture from the heat and then stir in the strawberries. Let this sit until the strawberries are at room temperature. (If you’re in a hurry, you can refrigerate them for about 30 minutes instead.)
In a separate large mixing bowl, pour in the heavy cream, powdered sugar and almond extract and whip with a mixer on medium-high speed for 5-7 minutes, until the cream is whipped into barely stiff peaks. Proceed to transfer about ¾ cup whipped cream to a piping bag, store in the fridge for later.
Chill
Then fold the remaining cream into the strawberry mixture. Stir to combine well and then pour into the pie crust. Cover the pie and refrigerate it for at least 4 hours to cool and set.
When ready to serve, top the pie with swirls of the remaining fresh whipped cream and remaining strawberry slices. Serve and enjoy!

HOW LONG IS CREAMY STRAWBERRY PIE GOOD FOR?
Because this fruit pie contains dairy, it does need to be stored in the fridge. If kept in an airtight container, it will hold up well for 2-3 days. This pie is so easy to make, it is not meant to last for very long after it is made.
Can I switch up the fruit in this pie recipe?
You bet you can, experimenting with this pie can be a lot of fun! If you are not a huge fan of strawberries, or you are and just want to try another fruit, do it! I think blackberries, blueberries, or raspberries would taste incredible in this pie. You can also do a combination of fresh berries if you’d like as well.
Can I freeze this Strawberry & Cream Pie?
I do not recommend freezing this berry and cream pie. The texture of the pie will not hold up well when defrosted. Since this dessert recipe is so simple to make, it is intended to make it the day or or day before you are going to serve it.
