Easy Pumpkin Soup made in less than 20 minutes with a can of pumpkin, black beans and lots of flavor! Delicious homemade pumpkin soup recipe that is creamy, healthy and delicious!
I really like using pumpkin when I make treats in the fall, but it really is so delicious in savory recipes too. This delicious pumpkin soup is so easy to make and I love how healthy it is too! You can add some chicken to add some protein and make it a little bit heartier – if you do it that way, you can serve it as a main dish!
What is pumpkin soup?
This pumpkin soup recipe uses a can of pumpkin that is mixed with garlic, onion, chicken broth, half and half, black beans and a variety of spices. The whole soup is ready in about 20 minutes!
Ingredients in Easy Pumpkin Soup
Olive oil – You’ll only need a tablespoon of olive oil to cook the onions and garlic in. You can use a different type of oil if you prefer.
Onion – I think yellow onions are best in soup, but you can use whatever variety you have on hand. I always buy diced onions from the grocery store (they are in the frozen section), so I usually cheat and use those!
Garlic – You can mince 2 cloves, or use 2-3 teaspoons of minced garlic. Minced garlic is another ingredient that I buy from the store and keep in stock in my refrigerator since I use it so often!
Chicken broth – You’ll need 3 cups of chicken broth to add the flavor and liquid necessary for the soup.
Half and half – One cup of half and half cream makes this soup so creamy and delicious. If you’re trying to lighten it up a little, you can use milk instead, but the soup will be a little bit thinner and the taste will be slightly different as well. But still delicious!
Pumpkin – You will use one (15 oz) can of pumpkin. You can use a homemade version if you prefer.
Brown sugar – You only need 3 tablespoons of brown sugar…so not a lot of sugar, but enough to give the soup a little bit of sweetness.
Cumin, chili powder and nutmeg – All of these spices give the soup the most amazing flavor, so don’t leave them out! You can add a little bit more or less according to taste preferences, especially with the chili powder.
Black beans – Use one (15 oz) can of black beans and make sure to drain and rinse them prior to adding to the soup. These give the soup some protein and texture and pair really well with the pumpkin flavor!
How to make pumpkin soup recipe
Add the olive oil to a small skillet and heat over medium heat. Add the onion and garlic and cook for about 5 minutes, or until the onions are soft and translucent.
Add the onions and garlic to all the other ingredients in a large pot and cook over medium heat for about 15 minutes, stirring occasionally until soup is heated all the way through.
Garnish with sour cream, cilantro and tortilla chip strips.
