One of our favorite manicotti recipes is for this Easy Cheese Manicotti. I’ve been making this for years with homemade manicotti shells. I love this chicken manicotti recipe because it is much simpler to use store-bought manicotti pasta and the whole dish comes together so quickly and easily.
What is chicken manicotti?
Manicotti is pasta in the shape of large tubes. Manicotti is usually stuffed with cheese or meat and cheese together. In this recipe, you’ll combine chicken with mozzarella and alfredo sauce to stuff the manicotti and then all of it is covered with spaghetti sauce and more cheese!
Ingredients in Easy Chicken Manicotti
Manicotti noodles – You will need 1 box (8 ounces) of manicotti. The box should have about 14-16 large pasta tubes.
Chicken – You will need 2 cups of shredded chicken. I like to use a rotisserie chicken which usually yields about 4 cups of chicken, so I save half in the refrigerator or freezer for another meal. Or just double up on the chicken for more protein. You could use cooked ground beef or Italian sausage instead of chicken if you prefer. If you are making your own chicken, you’ll need about 2 large chicken breasts.
Mozzarella – 2 cups of shredded mozzarella cheese adds just the right amount of cheesiness to this pasta dish.
Alfredo sauce – You’ll need one (15 oz) jar or about 2 cups of your favorite homemade alfredo sauce.
Spaghetti sauce – Use one (24 oz) jar of your favorite spaghetti sauce. You can also make our favorite slow cooker spaghetti sauce recipe or a different homemade version if you prefer.
How to make Easy Chicken Manicotti
Cook noodles according to pkg directions. Preheat oven to 350°.
Mix together Alfredo sauce, chicken and 1 cup of cheese. Stuff the manicotti noodles.
Spread enough spaghetti sauce on the bottom of a greased 9X13 pan to just barely coat the pan. Place the stuffed manicotti on top of the sauce. Cover noodles with the remaining spaghetti sauce and sprinkle the remaining cheese on top.
Bake for 25-30 minutes or until sauce is bubbling and cheese is melted.

- 2 cups shredded mozzarella
- 1 jar Alfredo sauce 15 oz
- 1 jar Spaghetti sauce 24 oz

CAN YOU FREEZE MANICOTTI?
If you freeze the manicotti after it is assembled, it works great! Make the manicotti and then cover the 9X13 tightly with foil. Freeze for up to 2-3 months. Pull out the manicotti the day before you plan to bake it and place in the refrigerator overnight to thaw. If it isn’t completely thawed before you are ready to cook, just add an extra 10-15 minutes to the cook time.
WHAT ALFREDO SAUCE IS BEST?
I prefer store-bought Alfredo Sauce that’s kept in the refrigerated section, as opposed to the jarred variety. It tastes much more homemade and fresh to me. You can also use homemade alfredo sauce to make the chicken manicotti – this lightened up version of Alfredo sauce is one of my favorites!
How to make shredded chicken
Using a rotisserie chicken saves a lot of time, so that’s what I usually do, but it’s easy to cook and shred some chicken also.
My favorite way to make shredded chicken is in the slow cooker. Place 4 chicken breasts in a slow cooker with a can of chicken broth. Cook on low for about 6 hours and use 2 forks to shred the chicken. At this point, the chicken should be super moist and should fall apart very easily.
