- Start with a Carrot Cake Mix. It just makes things easier! You’ll need the ingredients the box calls for as well. Feel free to make it ahead of time.
- Make them ahead of time! When stored properly, these cuties stay fresh for up to a week. So plan ahead and make the holiday easier.

Ingredients for Easter Chick Carrot Cake Truffles
Cake mix: You need one box of carrot cake mix (baked according to box directions with corresponding oil, eggs, etc.)
Cream cheese: Use a block of softened cream cheese to bind the cake so that you can shape them into balls.
For decorating the chicks
Candy melts: For the candy coating, use 1 lb. of yellow candy melts.
Chocolate chips: Create the chick eyes with mini chocolate chips.
Round sprinkles: You’ll need some round yellow sprinkles for the nose of each chick.
Leaf sprinkles: For the feet, use yellow & orange Fall leaf sprinkles.
Tips for making Easter Chick Carrot Cake Balls
You can see the full directions below, but here are a few tips when making these:
- Follow box cake instructions: Make sure to bake the carrot cake mix according to the package directions. Use the correct amount of oil, eggs, and any other ingredients for a moist cake.
- Mix the cake and cream cheese well: Break the cake into small pieces using your hands and then mix with the cream cheese well, making sure no big pieces remain so that they roll into balls easier.
- Make sure you have the right sprinkles: These dipping tools really do make the coating process easier! And assemble the sprinkles and chocolate chips beforehand so you can add them to the cake balls once dipped, so they stick.

Storing & Freezing Cake Balls
These treats can last up to one week when stored properly. It is best to keep them in an airtight container in the refrigerator to maintain freshness.
They can also be kept in the freezer for up to 1 month.

Easter Chick Carrot Cake Ball Recipe
Ingredients
- 15.25 oz box of Carrot cake mix with corresponding oil, eggs, etc.
- 1 cup water typical measurement- follow instructions on cake mix box
- ⅓ cup vegetable oil typical measurement- follow instructions on cake mix box
- 3 eggs typical measurement- follow instructions on cake mix box
- 8 oz cream cheese softened
- 1 lb yellow candy melts
- For each Chick: 2 mini chocolate chips for the eyes, a small round yellow sprinkle for the beak and yellow and orange leaf sprinkles for their feet and wings
Instructions
- Prep: Bake the carrot cake according to the box directions in a 9×13 baking dish.
- Shape & chill: Cut the cake into cubes and place them into a large mixing bowl. Add the softened cream cheese and use an electric mixer combine the cake and cream cheese.
- Scoop & roll the cake mixture into about 1-inch balls and place on a parchment-lined baking sheet. Chill the truffles for two hours in the fridge or in the freezer for 1 hour.
- Assemble: Melt the yellow candy melts in a microwave safe bowl in 30 second intervals until smooth.
- Use two forks to dip the cake balls in the chocolate, tap off any excess before placing back on the parchment paper lined tray.
- Working quickly and one at a time: decorate each chick by using 2 mini chocolate chips for their eyes (flat side out), a small round yellow sprinkle for the beak and yellow and orange leaf sprinkles for their feet and wings. Repeat with all the carrot cake balls & enjoy!

How do you Soften Cream cheese?
Here in the US, cream cheese comes in an 8-oz brick wrapped in foil packaging. Most recipes call for softened cream cheese, which can be done in a few different ways:
- Microwave it! Just 20 seconds or so in the microwave will sufficiently soften cream cheese. Be sure to remove the foil packaging first and to place the cream cheese in a microwave safe bowl.
- Hot towel wrap! This is what I tend to do most often. All you do is get a clean kitchen rag, get it soaking wet with hot water, then ring it out quickly and wrap the hot towel around the foil package of cream cheese. It takes just a few minutes and it’s softened!
- Let it sit out! If you can plan ahead, the absolute easiest way to soften cream cheese is just to let it sit on the counter for an hour or two. Easy!

Can I make these Easter Chicks in advance?
Absolutely! You can make these cake balls a day or two ahead of your celebration. In fact, letting them sit in the fridge can allow the flavors to meld together, enhancing the taste. Just store them in an airtight container to keep them fresh. Enjoy the delightful treat when you’re ready!
