Homemade Cranberry Syrup is sweet and tangy & perfect for pancakes and waffles! Easy syrup recipe made with cranberries, sugar, water, spiced with cinnamon & almond.

I adore making all sorts of recipes with fresh cranberries this time of year! The bright, tart, tangy flavor goes well on pancakes, waffles & crepes for breakfast. You can also add it to sparkling water for a festive drink, or as an ice cream or yogurt topping!
You will need to strain the cranberries with a fine mesh strainer, but it’s super easy! I also like to put the syrup into pretty jars like these. They make great gifts!
Cranberry Syrup Ingredients
Cranberries: For the base of this syrup recipe, you need 12-oz of cranberries (thawed, if frozen).
Sugar: Help sweeten the syrup by adding in 1 cup of sugar.
Corn syrup: Use ¾ cup of corn syrup to thicken the mixture to the right consistency.
Cinnamon: Add in ½ tsp of cinnamon for a wonderful warm flavor.
Almond extract: Enhance the taste of this syrup by using ¼ tsp of almond extract.

Storing Cranberry Syrup
Cranberry syrup should be stored in an airtight container in the refrigerator. It can last up to two months if stored properly. To extend its shelf life, the syrup can be frozen for up to three-four months. Before using the frozen syrup, it should be thawed in the refrigerator overnight. It is important to note that the texture of the syrup may change after it has been frozen and thawed, but usually a quick whisk helps restore it.
Alternatives to Corn Syrup
If you’d rather not use corn syrup, you can use honey, maple syrup (not table/ pancake syrup!) or agave as alternatives. I find all these options add great flavor, but more sweetness to the syrup, so I recommend adding ½ cup initially, then taste the syrup and see if it needs more.

- Boil berries: Combine cranberries and ¼ cup water in medium saucepan. Bring to a boil over medium-high heat. Boil 10 minutes or until cranberries are tender and pop, stirring frequently with wooden spoon.
- Add in the sugar, corn syrup and cinnamon to saucepan. Boil for another 10 minutes or until mixture thickens and coats the back of a spoon, stirring constantly. Remove the saucepan from the heat.
- Strain: Place a fine mesh strainer over medium bowl. Pour cranberry mixture into sieve, pressing cranberries with back of wooden spoon to extract all of juices. Cool completely.
- When syrup has cooled completely, strain again; discard solids. Stir in almond extract. Transfer the syrup to a clean, dry, airtight decorative bottle or mason jar. Enjoy!
