Easy Salsa Bites are a simple, gluten free appetizer made with cream cheese, salsa, eggs and cheese. Cheesy and perfectly portioned, these little bites make great snacks and are easy to take to a party!
EASY SALSA BITES
Easy Salsa Bites are made by mixing cream cheese, salsa, eggs, cheese, olives, green onion and garlic. The mixture is scooped into a mini muffin pan and baked. You can serve them warm, but they are delicious cold as well. Just keep the salsa bites in the refrigerator until ready to serve and add a little extra salsa on top.
Why make Easy Salsa Bites?
There are so many great reasons to make this simple appetizer. Here are a few:
- Gluten-free. Not everyone has to eat gluten free, but many people have wheat sensitivities and sometimes it’s hard to find a recipe that is gluten free and tasty too! Just make sure to use a salsa that is gluten free.
- Quick and easy. The recipe only takes about 5 minutes to mix and scoop. You can make the salsa bites ahead of time and keep them in the refrigerator until ready to serve.
- Healthy. (At least a little bit healthy.) Only 50 calories per bite! I love snacks that are filling, but aren’t sugary or full of fat. These little bites have some protein and some veggies too! You can use a low-fat cream cheese to reduce the calories and fat.
INGREDIENTS IN EASY SALSA BITES
Cream cheese: You will need 1 block (8 oz) of cream cheese. You can use any variety you want (regular, non-fat or low-fat), but just make sure that the cream cheese is softened to room temperature before adding to the other ingredients.
Salsa: The salsa in the recipe adds the perfect flavor to the recipe. I usually use a Thick and Chunky Salsa in the bites, but I like to use fresh salsa on top when serving. You can use whatever kind of salsa you want! If you like spicy, use a spicy salsa! If you like green salsa, use green salsa! It’s pretty easy to change up the flavor just by using different kinds of salsa.
Eggs: You’ll need 2 eggs to help bind everything together. Use a fork to lightly beat the eggs before mixing in with the other ingredients.
Cheese: The recipe calls for ½ cup of shredded cheddar cheese, but you can use any kind of cheese you’d like. Colby Jack cheese or a Mexican blend both work great!
Olives: Add two tablespoons of chopped black olives for added texture and flavor.
Green onion: Just a tablespoon of chopped green onion adds a lot of flavor! I like to very finely chop the onion. You could use a teaspoon of onion powder if you don’t have any fresh green onions available.
Garlic: Just a teaspoon of minced garlic is called for in the recipe. I always keep a jar of minced garlic in my fridge to save time when making recipes like this one!
HOW TO MAKE EASY SALSA BITES
Preheat oven to 350°.
In a large bowl, beat the cream cheese until smooth and creamy. Add the salsa and eggs and mix until well combined. Sir in the cheese, olives, green onion and garlic.
Coat a 24-cup mini muffin pan with non-stick cooking spray. Use a 1 tablespoon cookie scoop to scoop the cream cheese mixture into each mini muffin cup.
Bake for 15-18 minutes or until the centers are set.
Let the salsa bites cool in the pan for about 4-5 minutes and then remove and cool on a wire rack. Once cooled, store in the refrigerator. Top with a little bit of additional salsa just before serving.

- 2 Tbsp chopped olives

What kind of salsa to use in Easy Salsa Bites?
You can use any type of salsa you want! If you like Thick and Chunky Salsa, go ahead and use that! If you don’t like larger chunks, go ahead and use a Restaurant Style Salsa instead. You can use store-bought Pace brand salsa (or the equivalent), or you can use a fresh, refrigerated salsa. If you prefer the flavor of green salsa, go ahead and use that!
I usually use Pace salsa in the Salsa Bite mixture, but I prefer to use a fresh salsa to spoon on top right before serving.
Easy Salsa Bites variations
I’m picky and my kids are picky, so I’m constantly swapping out ingredients to adapt to personal tastes and preferences. It’s easy to leave out the green onions and olives, and either swap them out with something else (peppers, tomatoes, mushrooms) or just leave out the veggies completely.
You can use a different type of cheese if you’d rather, and you can even add some meat if you’d like. Cooked and crumbled sausage, ham and shredded chicken are all great options.
WHAT KIND OF CREAM CHEESE TO USE?
I usually use regular cream cheese, but you can also use a low-fat or non-fat variety if you prefer. Just make sure it is softened to room temperature before adding to the recipe.
HOW TO SOFTEN CREAM CHEESE
Cream cheese is easy to soften – you can set it out at room temperature or soften it more quickly in the microwave.
-To soften at room temperature more quickly, just set the cream cheese on a plate and cut into smaller pieces. The cream cheese should reach room temperature in about 15-20 minutes with this method.
-To soften the cream cheese in the microwave, remove the foil packaging and set the cream cheese in a small bowl or on a plate. Microwave for about 10-15 seconds. If the cream cheese is still cold and hard, continue to microwave for about 5 seconds at a time until the cream cheese is soft throughout. Just make sure not to microwave it too long or it will start to melt!
