EASY SALSA BITES

Easy Salsa Bites are a simple, gluten free appetizer made with cream cheese, salsa, eggs and cheese. Cheesy and perfectly portioned, these little bites make great snacks and are easy to take to a party!

Ingredients

  • 1 brick 8 oz cream cheese, softened
  • cup salsa + more for optional topping
  • 2 eggs lightly beaten
  • ½ cup shredded cheddar cheese
  • 2 Tbsp chopped olives
  • 1 Tbsp chopped green onion
  • 1 tsp minced garlic

Instructions

  • Preheat oven to 350°.
  • In a large bowl, beat the cream cheese until smooth and creamy. Add the salsa and eggs and mix until well combined. Sir in the cheese, olives, green onion and garlic.
  • Coat a 24-cup mini muffin pan with non-stick cooking spray. Use a 1 tablespoon cookie scoop to scoop the cream cheese mixture into each mini muffin cup.
  • Bake for 15-18 minutes or until the centers are set.
  • Let the salsa bites cool in the pan for about 4-5 minutes and then remove and cool on a wire rack. Once cooled, store in the refrigerator. Top with a little bit of additional salsa just before serving.
