What is Pecan Coffee Cake?
It’s a delicious coffee cake made with a pecan streusel topping that goes both inside the cake in a layered appearance and on top of the cake for that perfect coffee cake look. Every bite is tender and soft thanks to the sour cream in the batter and since this cake is so easy to make, you’ll want to repeat it often.
Pecan streusel coffee cake ingredients
For the Cake Batter, You Will Need:
-Flour: We need 1 cup of all-purpose flour for the gluten-filled base of this breakfast cake.
-Butter: One stick of softened unsalted butter (1/2 cup) will add a nice richness to the texture and flavor.
-Sugar: We need 1/2 cup of granulated sugar to help sweeten up the cake.
-Egg: One room temperature egg will help bind the cake together. You can warm an egg quickly by placing it in a bowl of warm water for a few minutes.
-Sour Cream: We need 1/2 cup of room temperature sour cream to help thicken the batter and make the cake moist and fluffy once baked.
-Leavening agents: We need both 1/2 teaspoon of baking powder and 1/3 teaspoon of baking soda to help this cake rise while baking.
-Vanilla: 1 teaspoon of vanilla extract will help us enhance the flavors in this cake. I like to use high-quality vanilla, but use what you have on hand.
For The Pecan Streusel Topping, You Will Need:
-Pecans: 1 cup of chopped pecans will be needed for the streusel topping. You can buy your pecans whole and chop them yourselves or buy them pre-chopped.
-Cinnamon: One tablespoon of cinnamon will help to ensure that every bite is fully spiced.
-Salt: We need 1/2 teaspoon of salt to help enhance the flavors in this topping so that it tastes incredible.
-Flour: One cup of all-purpose flour will help keep our streusel thick and dry enough it doesn’t become a wet sticky mess.
-Brown sugar: 1/3 cup of brown sugar will sweeten our streusel and give it a nice depth of flavor and caramelization.
-Butter: We need 1/3 cup of melted unsalted butter to help bind the streusel topping ingredients together into crumbs.
How to make pecan streusel coffee cake
Preheat your oven to 350°F and line a square 8×8 baking dish with parchment paper (or spray with nonstick cooking spray).
Whisk together the flour, baking soda, and baking powder in a medium-sized bowl. Set aside.
In a larger mixing bowl, whisk together the butter and sugar until creamy and light (about 2-3 minutes).
Add in an egg and the vanilla.
Mix in the sour cream.
Add your dry ingredients to the butter mixture and mix again until just combined.
To make the streusel topping, whisk together the flour, brown sugar, salt, and cinnamon. Add in the melted butter and stir until it’s the texture of sand. Add in the chopped pecans.
Spread half of the cake batter into your prepared baking pan.
Sprinkle half of the streusel topping over the batter.
Dollop the remaining cake batter over the top and then smooth it out into an even layer.
Sprinkle the remaining streusel over the top.
Bake in the oven for 35-45 minutes or until golden brown on top and a toothpick can be inserted and come out clean (or with just a few crumbs).
Cool for 10-15 minutes before cutting into portions. Enjoy!

How to store coffee cake
Keep your coffee cake stored in an airtight container or well wrapped with plastic wrap on a plate to avoid drying out. You can keep your coffee cake stored at room temperature for 3-5 days.
Can I freeze the coffee cake?
Yes, after the cake cools completely you can store it in the freezer. I recommend cutting into individual serving pieces and wrapping each separately or layering them in a container so that it’s easier to grab if you only want a piece at a time. Freeze for up to 3 months and thaw before eating for best results.
