Easy Cinnamon Apple Cake is one of those recipes that is really unique and when I saw it, I wasn’t sure if it would be really good or really NOT good. The recipe was so easy that I really hoped it would work out, and it actually is amazing when it is done baking! The recipe calls for the cinnamon graham crackers and the cinnamon flavor is perfect. I’m sure that you could use the normal graham crackers too, but just make sure to add some cinnamon if you do that – apples just need to be paired with cinnamon!
I love that you only need five ingredients and they are usually ones that I have on hand all the time. The cake is moist and flavorful and really doesn’t need any type of frosting at all, but if you want it to look a little fancier or be more of a dessert, just add a scoop of vanilla ice cream on top. Why is it that everything apple flavored just tastes better with vanilla ice cream?!?
What type of apples work best in apple cake?
I use Honeycrisp apples in this recipe because that’s what I usually have in stock in my fridge, but you could use any type of crisp, tart apple (Fuji, Pink Lady, etc). I discovered Honeycrisp apples a few years ago and ever since I tried them, I’ve become a bit of an apple snob. They are just so good! I never bought them before because they tend to be quite a bit more expensive, but I found a local grocery store near my home where they are usually only $.99/pound! Gotta love living in Washington state where the apples are plentiful – they are so big here too! Like twice the size of apples in other states I’ve visited!
Are there nuts in apple cake?
This recipe doesn’t call for nuts but I think that chopped walnuts would be a great addition to this recipe. I’m just not a fan of nuts in baked goods and my kids won’t touch them so I usually don’t put them in, but they would pair very nicely with the apples in this cake if you like them!

- melted butter
- 1 medium apple, peeled and diced
How to make easy apple cake
Grind up graham crackers into fine crumbs. I think it is easiest to do this in a blender.
Mix graham cracker crumbs, sugar, butter, eggs and diced apple pieces together until well combined.
Pour into a greased 8X8 inch pan. Bake at 350° for 40-45 minutes or until toothpick inserted in the center comes out clean. As with all baked goods, I think this cake is best served warm (with vanilla ice cream, of course)!

- 28 squares cinnamon graham crackers about 1 1/2 sleeves of crackers
- 1 cup sugar
- 1/2 cup butter melted
- 3 eggs
- 1 medium apple peeled and diced
- Grind up graham crackers - I used my blender for this.
- Mix graham cracker crumbs, sugar, butter, eggs and apple pieces together until well combined.
- Pour into a greased 8X8 inch pan. Bake at 350° for 40-45 minutes or until toothpick inserted in the center comes out clean. As with all baked goods, I think this cake is best served warm (with vanilla ice cream)! Enjoy!

How to crush graham crackers
There are a few different ways to make graham cracker crumbs.
-Put the graham crackers in a blender. It helps to break them up a little bit before placing them in the blender. If your blender seems to be struggling to crush the graham crackers, try just crushing half at a time.
-Place the graham crackers in a ziplock bag and seal the bag, making sure to let the extra air out before sealing. Use a rolling pin to crush all of the graham crackers into finely crushed crumbs.
-You can cheat like I often do and just buy pre-crushed graham cracker crumbs! They come in a box and can be found in the baking aisle, next to the pre-made graham cracker pie crusts. I haven’t been able to find pre-crushed graham cracker crumbs that are cinnamon flavored, but you could use regular ones and then add 1-2 Tbsp of cinnamon. About 10 graham crackers yield 1 1/2 cups of crumbs, so you will need about 4 1/2 cups of crumbs for this recipe.
How to store apple cake
Apple cake will stay fresh for 3-4 days at room temperature or the refrigerator. Just place any leftovers in the microwave for 10-20 seconds before eating and the cake will taste just like it was baked fresh.
Is apple cake healthy?
There are a few easy swaps you can make to make this easy Cinnamon Apple Cake a little bit healthier.
-Reduce the amount of sugar. Many times you can reduce the sugar by half without being able to notice much of a difference.
-Use applesauce in place of some or all of the butter. The more applesauce you use, the more the consistency will change, but the flavor will stay the same and the cake will still be delicious with fewer calories.
