Casseroles are perfect for weeknight dinners and this one is absolutely delicious. Only 10-15 minutes of prep is needed to make an easy version of stuffed peppers. You don’t even have to bake this one! Everything cooks together in one pot on the stove and is ready in less than 30 minutes!
STUFFED PEPPER CASSEROLE
This casserole tastes just like stuffed peppers, but everything is made in one pot on the stove. The ground beef is cooked with onion and garlic and then several different spices are added to give the dish lots of flavor. Add spinach, sliced peppers, beef broth, and tomatoes before adding rice and cheese, and then mix everything. Once everything is heated, the casserole is ready to serve!
What to serve with Stuffed Pepper Casserole
A great thing about casseroles is they make a great meal all on their own. If you do want to add something on the side, a slice of Homemade Bread or a 30-Minute Dinner Roll works great too! And don’t forget dessert. Add a slice of Easy Chocolate Cherry Cake or No Bake Strawberry Jello Cheesecake.

Ingredients in One-Pot Stuffed Pepper Casserole
Ground beef: Ground beef is preferred in this recipe, but ground chicken or turkey works well too.
Onion: You can chop up a yellow onion or you can cheat like I do! I always stock up on chopped frozen onions from the freezer section at the grocery store so that I always have some on hand for recipes like this one. It saves so much time!
Garlic: You will need 3 garlic cloves, minced or chopped or 1 1/2 teaspoons of minced garlic. Using minced garlic is another way to save a few minutes of prep time. I always keep a jar in my fridge!
Tomato paste: Adding 2 tablespoons of tomato paste adds a little bit of moisture to the meat, along with a lot of flavor!
Italian seasoning, oregano, cumin, paprika, kosher salt, and black pepper: All of these spices and seasonings add a ton of flavor to the stuffed pepper casserole.
Spinach: You will need 5-10 ounces of fresh spinach for the casserole.
Peppers: You will need red, yellow, and green bell peppers. Slice them up before adding them to the casserole.
Beef broth: A cup of low-sodium beef broth adds the perfect amount of flavor to the dish.
Tomatoes: Use one 15-ounce can of petite diced tomatoes. Do not drain the tomatoes before adding them to the recipe.
Rice: You need 2 cups of rice for the recipe. Use minute rice or packaged cooked rice to save time. If you use packaged rice, feel free to change up the flavors.
Cheese: You will need a cup of shredded cheese. A Mexican blend works great, but a cheddar or a cheddar jack blend works well too!
Cilantro: Just a little bit of chopped cilantro is both delicious and decorative sprinkled on top of the casserole.
How to make One-Pot Stuffed Pepper Casserole
In a large pot over medium heat, add the ground beef, onion, and garlic cloves. Cook for 7 minutes or until the meat is cooked through. Drain any fat from the pot.
Add the tomato paste, Italian seasoning, oregano, cumin, paprika, salt, and black pepper. Cook for 3 minutes. Mix continually.
Add the spinach, peppers, beef broth, and tomatoes. Mix until combined.
Turn the burner to medium-low and allow to simmer for 8-10 minutes or until the peppers soften. Stir occasionally while cooking.
While that is simmering, make the 5-minute rice.
Add the cooked rice and ½ cup of cheese to the pot. Mix until combined. Remove from heat and then top with the remaining cheese and cilantro and serve.

- 1 pound ground beef
- ½ cup yellow onion
- 3 garlic cloves minced or chopped
- 2 tablespoons tomato paste
- 1 tablespoon Italian seasoning

- 1 teaspoon coarse kosher salt
- ½ teaspoon black pepper
- 5-10 ounces spinach
- 2 red bell peppers sliced
- 2 yellow bell peppers sliced
- 1 green bell pepper sliced
- 1 cup low-sodium beef broth
- 15 ounce petite diced tomatoes and juices
- 2 cups rice 5-minute rice or packaged cooked rice
- 1 cup fiesta cheese divided
- ¼ cup cilantro chopped
Instructions
- In a large pot over medium heat, add the ground beef, onion, and garlic cloves. Cook for 7 minutes or until the meat is cooked through. Drain any fat from the pot.

You can keep the leftovers in an airtight container for up to 5 days in the refrigerator. This is a great meal prep recipe!
Can you freeze Stuffed Pepper Casserole?
I don’t freeze rice dishes, as I don’t love the consistency of the rice when thawed out, as it gets a bit too soft. If you left the rice out you could definitely freeze the dish and add the rice before serving.
