This healthy Texas caviar is a simple to make appetizer recipe that pairs best with tortilla chips. Serve it up on game day or at just about any get-together. The recipe serves a crowd and everyone loves it.
About This Cowboy Caviar Recipe
Unlike other salsa-like recipes, this one has something the others don’t- avocado. In my opinion, don’t ever leave it out because that’s what makes this dish go from good to stellar.
You can, however, trade a can of beans or the black eyed peas and have the dish taste pretty much the same.
How to Serve Cowboy Caviar
We serve this dip in a large bowl with tortilla chips on the side. You can also serve it in smaller, single sized cups for easy serving.
Leftovers are incredible over tacos or on quesadillas.
What’s The Difference Between Texas Caviar and Cowboy Caviar?
Believe it or not, there is no difference. Texas caviar goes by many names including Mississippi caviar, and cowboy caviar! But whatever it’s called, this tasty bean dip recipe stays pretty much the same, and I think we can all be a bit thankful for that!
The BEST Texas Caviar Ingredients
-1 can black beans, drained and rinsed
-1 can great northern beans, drained and rinsed. You can use Black Eyed Peas instead- I think they taste amazing!
-1 can sweet corn, drained. You can use frozen corn if you prefer. No need to cook ahead or anything, just make sure the corn will have 20 minutes or so to thaw in the dip before serving.
-3 good sized Roma tomatoes, seeded & diced. You don’t want the runny seeded part of the tomato in the dip, so just gently remove it before slicing the tomatoes.
-1 bunch green onions, sliced thin. You can use 1/4 cup finely chopped red onion instead.
-2 large avocados, diced. Adds a great texture to the dip!
-about 1/2 a bunch of fresh cilantro, chopped
-8 oz {1 cup} Italian dressing. Can use pre-made or an Italian Dressing packet mixed according to package directions.
-1 small lime, sliced in half {I juice 1/2 the lime into the dish, then use the other half to garnish
How to Make Texas Caviar Dip
Add all of the ingredients into a large bowl, including the Italian dressing and stir. Serve immediately.
You can make the dip several hours ahead of time and just give it a stir before serving. It’s best served the same day.
Serve with tortilla chips. It’s also amazing over chicken tacos or chicken enchiladas. Or quesadillas. Or just eaten by itself, as a snack. YUM.

Ingredients
- 15 oz black beans drained and rinsed
- 15 oz great northern beans drained and rinsed
- 15 oz sweet corn drained
- 3 roma tomatoes seeded & diced
- 1 bunch green onions sliced
- 2 avocados diced
- 1/2 bunch cilantro chopped
- 8 oz Italian dressing 1 cup
- 1/2 lime sliced in half
Instructions
- Add all ingredients to a large bowl, including Italian dressing. Stir to combine.
- Squeeze in juice from half of 1 lime. Stir again. Salt lightly if desired.
- Serve with tortilla chips.

Can I Freeze Texas Caviar?
Yes you can, just place your mix inside of an airtight container and freeze for up to 3 months. When you’re ready to eat it, place it in the fridge overnight to thaw, stir, and enjoy.
How Long is Cowboy Caviar Good For In The Fridge?
After it’s been made, keep your bean dip caviar stored inside of an airtight container in the fridge for up to 4 days. Just make sure to mix it around before eating because a lot of the flavors will settle to the bottom.
