Nostalgic Strawberry Pop Tart made easy at home with just a handful of ingredients! Sweet strawberry jam is baked between layers of pie crust & topped with a simple vanilla glaze & sprinkles!
My kids love pop tarts for weekend treats! But do you know who I find ripping open those silver packages almost as much as the kids? My husband! Ha! I’m not a huge fan, because I think they’re dry and need more frosting. So you know what I do? I MAKE MY OWN! Enter this super fun, jumbo sized Strawberry Pop Tart! It’s so ridiculously simple to make and my family goes crazy over them.
Why you’ll love making a Strawberry Pop Tart
- Just a few ingredients! Just 4 basic ingredients for the Pop Tart, plus a simple glaze. EASY.
- It’s ready in about 30 minutes. About 15 minutes prep work and then it bakes for 15ish minutes. That’s it! Let it cool (pop it in the fridge or freezer to cool faster!) then brush it with the glaze. Done!
- So fun & festive! I decorated mine for Valentine’s Day with pink and red XOXO sprinkles, but you can use whatever type of sprinkles you’d like!
Ingredients you need to make a Jumbo Pop Tart
— PIE CRUST: You’ll need 2 store-bought pie crusts. One 7 oz box contains 2 pie crusts. You can also make your own all butter pie crust. YUM.
— JAM: You fill the pie crust with ½ cup strawberry jam. You can use store bought or homemade.
— EGG WASH: For the egg wash which we brush the pie crust with, you’ll need 1 large egg and 1 tablespoon water.
— POP TART ICING: To make the icing, you’ll need 1 cup powdered sugar, 3 tablespoons milk and 1 teaspoon vanilla extract
— SPRINKLES: We used Valentine’s XOXO sprinkles, but you can use what you have on hand!
How to make a Strawberry Pop Tart
Preheat oven to 375°F. Spray a baking sheet with nonstick cooking spray or line with parchment paper. Set aside.
Prep the Pop Tart Dough
On a large floured surface, unroll both pie crusts and use a rolling pin to roll them out into 10” x 8” rectangles or the best size that will fit your baking sheet. It helps to use a ruler to precisely cut them.
Carefully roll one of the rectangles back around your rolling pin and roll it onto your prepared baking sheet.
Fill with Strawberry Jam
Spread the strawberry jam in the center of the crust, leaving a 1-inch border on all sides.
Place the second pie crust on top.
Seal the Pop Tart Edges
Use a fork to make indents along the border of the pop tart to seal it. Poke the fork all over the top of the pop tart. This step will allow the air to escape while it bakes in the oven.
Make the egg wash by whisking 1 egg with 1 tablespoon of water. Brush the egg wash around the border of the pop tart.
Bake that amazing Pop Tart
Bake for 15 to 20 minutes or until the pop tart is brown around the edges. Remove from heat and allow to cool slightly before icing.
Make the icing: In a medium-sized bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
Top with Vanilla Icing & Sprinkles
Spoon the icing over the pop tart. Top with sprinkles and allow the icing to harden before cutting it.
Use a knife to cut into 8 regular size pop tarts, or enjoy it as one giant pop tart.
Can I use Any Kind of Jam?
We obviously used strawberry jam, but you can use any type of jam you’d like! It’s be great with peach, raspberry, or even our fabulous lemon blueberry jam. The sky’s the limit! Use what you love!

How do you Store a Strawberry Pop tart?
Leftovers (if you have any) will store for 3 to 4 days at room temperature in an airtight container or bag.
Can you freeze a pop tart?
Yes, you can freeze a pop tart! Allow the pop tart to cool completely and then store in individual freezer bags. Or you can store them all in a large freezer bag, but I recommend placing parchment paper squares between each slice so they don’t freeze together.
How to Reheat a Homemade Pop Tart
Reheat each slice in the microwave for 10-30 seconds or until warmed through. Do not use the toaster to reheat as the filling will not stay together like a store-bought pop tart. The jam and icing will melt and drip into your toaster and it will be a big mess.
