Strawberry Lemonade Pina Colada Ingredients
Strawberries: You will need 2 cups of strawberries, frozen or fresh, washed and cored.
Lemon zest: Adding in 2 tablespoons of lemon zest will add a wonderful citrus flavor to this drink.
Lemon juice: Use 3 tablespoons of lemon juice (for the juice and lemon zest, you will need 2 total lemons).
Sugar: For a nice sweet balance of flavor, add in 1/2 cup of sugar, divided.
Pineapple: You need 4 cups of fresh pineapple for one of the pina colada portions of this mocktail.
Coconut milk: For the second pina colada flavor, you need 1 13.5-ounce can of coconut milk.
Vanilla extract: To add in more amazing flavor, use 1 teaspoon of vanilla extract.
Ice: To make this drink nice and chilled, use 3 cups of ice cubes.
Easy step by step on how to make Strawberry Pina Colada’s
Prep
Begin by washing the strawberries, removing the stems. Also, cut up the pineapple (if you are using a fresh one) and set aside the required measurement of pineapple chunks.
After that, zest the lemon for the needed amount and set it aside. Then, juice the lemons and measure out the amount of juice needed for this drink.
Blend
Next, combine the clean strawberries, lemon zest and lemon juice, as well as a 1/4 cup of sugar in the blender. Proceed to blend until smooth. Transfer this mixture into a separate container and set aside. Rinse out blender for the next mixture.
Then, combine the pineapple chunks, coconut milk, vanilla extract, the remaining 1/4 cup of sugar and ice cubes in the blender. Continue to blend these ingredients until smooth.
Assemble
Starting with the pineapple mixture, fill each glass about a 1/4 of the way full, then add a couple spoonful’s of the strawberry mixture on top, add more pineapple mixture, them more of the strawberry mixture, repeat until you have filled the glasses to the desired amount.
Finish with a dollop of strawberry mixture on the top, garnish with diced strawberries, pineapple, or lemon slices.

Tip: If you want a thicker, more smoothie-like consistency, then cut the pineapple and freeze it for several hours prior to making pina coladas. Then omit the ice when blending.

HOW LONG ARE STRAWBERRY PINA COLADAS GOOD FOR?
Like most frozen drinks, I recommend only making this mocktail right before you plan on serving it. Drinking it immediately is best because that is when the textures, flavor, and temperature, are really at their ideal peak of perfection.
How do you zest a lemon?
The easiest way and most common, is to use a box grater. Using the side with the fine holes and sharp grater teeth, gently shave the yellow skin from the lemon. Turn the fruit as you go, avoid grating into the fruit and the white pith. You can also use a citrus zester, if you have one of those kitchen gadgets.
