We love mocktails in our family and this one is a perfect blend of two favorites- strawberry lemonade and pina coladas. Ha! See what I did there? It’s easy to put together and tastes fancy. Enjoy!
Strawberry Lemonade Pina Coladas
- 2 cups strawberries
- 2 TBSP lemon zest
- 3 TBSP lemon juice (juice and lemon requires 2 lemons, total)
- 1/2 cup sugar, divided
- 4 cups fresh pineapple
- 1 13.5-oz can Coconut milk
- 1 tsp vanilla
- 3 cups ice cubes
Combine strawberries, lemon zest and juice, as well as 1/4 cup of sugar in a blender. Blend until smooth. Pour into a separate container and set aside. Rinse out blender.
Combine pineapple, coconut milk, vanilla, remaining 1/4 cup of sugar and ice cubes in the blender. Blend until smooth.
Starting with the pineapple mixture, pour into glasses, stopping to add a couple spoonfuls of the strawberry mixture intermittently. Finish with a dollop of strawberry mixture on top. Garnish with strawberries, pineapple slices and lemon zest. Yields about 6 mocktails, depending on size of the glass.
Tip: If you want a thicker, more smoothie-like consistency, then cut the pineapple and freeze it for several hours prior to making pina coladas. Then omit the ice when blending.

The 4-in1 Zester is another of my favorites. Instead of using the grater side, I used another part of the zester to get larger peels of lemon. It saves time and I love how easy it is!
