Making Pumpkin Pie Cake
This cake recipe is handed down to me from my mother in law and as I said before, it never lasts long. Everyone devours this cake within seconds it’s so irresistible. You can put it together really fast and your house smells heavenly while it’s cooking.
Can I Freeze Pumpkin Cake?
You can freeze it in an airtight container for up to 3 months. I recommend keeping it well wrapped to avoid any freezer burn and ice crystals (just in case). To thaw simply place it in the fridge overnight.
How to Store Pumpkin Cake
This cake should be kept stored in the fridge when not being eaten within a few hours. The fridge will help to retain the texture and feel of the cake. Plus, if you topped it with Cool Whip already, it keeps that from melting.
Pumpkin Pie Cake Ingredients
-1 box of yellow cake mix
-3/4 cup butter or margarine (1.5 sticks)
-3 egg
-1 30-oz can Pumpkin Pie Mix {not just pumpkin!}
-2/3 cup milk
-1/4 cup sugar
-1 tsp cinnamon
How to Make Pumpkin Pie Cake
Grease the bottom of a 9×13 baking dish and preheat the oven to 350F degrees.
In a bowl, mix together the box of yellow cake mix (minus 1 cup), ½ cup butter and an egg until crumbly. Pour into the bottom of the baking dish.
In a bowl, barely mix together the pumpkin pie mix, milk and 2 eggs and then pour it on top of the 1st layer in the baking dish.
Mix together the 1 cup of reserved cake mix, sugar, ¼ cup butter and cinnamon until crumbly and pour on top of the cake.
Bake in a preheated oven for 50 minutes.
Top with Cool Whip and a dash of cinnamon.
Pumpkin Pudding Cake
Ingredients
1st layer
- 1 box yellow cake mix {reserve 1 cup after you open it}
- 1/2 cup butter cold
- 1 egg
2nd layer
- 1 30oz Pumpkin Pie Mix NOT just pumpkin!
- 2/3 cup milk
- 2 eggs
3rd layer
- 1 cup dry yellow cake mix
- 1/4 cup sugar
- 1/4 cup butter
- 1 tsp cinnamon
Instructions
- Grease the bottom of a 9x13 pan. Set aside 1 cup of the dry cake mix.
- Use a hand mixer to blend remaining cake mix, butter and egg until crumbly. Pour in the bottom of the pan.
- Barely mix the ingredients for the 2nd layer and pour mixture over 1st layer.
- Mix 3rd layer ingredients until crumbly and sprinkle on top.
- Bake at 350 degrees for 50 minutes. Top with Cool-Whip and a dash of cinnamon. Enjoy!

What’s the Difference Between Canned Pumpkin and Canned Pumpkin Pie Mix?
Canned pumpkin is cooked and pureed pumpkin without anything else added to the can. Canned pumpkin pie mix is the pumpkin puree, with seasonings and some sweetener added.
Is Pumpkin Pudding Cake Dairy Free?
If you use plant based butters and a cow milk alternative like almond milk this recipe should be dairy free. Double check the ingredients on everything though just in case. Especially if you’re remaining dairy free as a result of an allergy.

Do you separate the dry cake mix and then make the first part of the cake mix according to the box or do you just use the dry mix?

You won’t be following the directions on the box. For the first layer, you are just mixing the dry mix with the egg and butter. Hope that helps!
