No Yeast Wheat Bread that is made without yeast, no eggs, no mixer or kneading required! This simple bread recipe is sweet, moist and so delicious, it’s hard to believe there isn’t any yeast in it.
No Yeast Wheat Bread is absolutely incredible. No yeast needed. The ingredients are all very basic and you don’t need beer or any other yeast substitute. You don’t even need eggs either! And all you need is a spoon to mix the batter – no mixer or kneading required.
This bread recipe is a little bit sweeter and a little bit more dense than traditional wheat bread, but it really is so yummy and tastes so good with just a little bit of butter. I’ll be completely honest in saying that I still prefer a honey wheat bread recipe that has yeast in it, but if you don’t have the time or you don’t have yeast, this recipe is a fabulous option and it really is delicious, I promise!
Ingredients in No Yeast Wheat Bread
Flour – The recipe calls for whole wheat flour and a little bit of regular all-purpose flour as well. You can change the ratio a little bit or even just use all wheat flour, but the bread will be even more dense at that point.
Baking soda and salt – Make sure your baking soda isn’t expired. If your baking soda is old, the bread may be a little more flat than you’re hoping for!
Brown sugar – If you think the bread is too sweet, you can reduce this a little bit.
Molasses – Just a little bit of molasses, but it adds such a wonderful flavor to this bread. If you don’t have molasses, you can use honey instead. If you use honey, the color of the bread will be a little lighter as well.
Buttermilk – If you don’t have buttermilk on hand, you can make your own very easily! All you have to do is add 2 Tbsp of lemon juice or vinegar to 2 cups of regular milk and let it sit for about 10 minutes before adding to the recipe.
How to make No Yeast Wheat Bread
Preheat the oven to 350°.
In a large bowl, stir the flours, baking soda, salt and brown sugar together until well combined.
Mix in the molasses and buttermilk and stir until everything is moistened. Don’t stir the batter too much – you only want to stir just until everything is combined.
Pour the batter into a 9X5 bread pan that has been well greased. I like to use the non-stick baking spray that has flour in it with this bread recipe because it is stickier than regular yeast breads.
Bake for about 50-60 minutes or until a toothpick comes out of the center cleanly. I like to use a food thermometer to see if the bread is done – the internal temp in the center of the bread should be about 190°F. If the top looks like it is getting too brown, you can put some foil over the top for the last part of baking, and then continue baking until the center is done.
Cool in the pan for about 5-10 minutes and then remove from the pan and cool on a wire rack until completely cooled. Or you can do what we do in my house and wait until it’s cooled just enough that you don’t burn yourself while slicing the bread so that you can eat it hot and fresh from the oven!
AVOID SUNKEN BREAD
The easiest and best way to avoid sunken bread is to use a cooking thermometer to check the inside of the loaf. Fully cooked bread will register 200°F on a thermometer. My all-time favorite thermometer is the Thermapen. It’s super fast and incredibly durable. Another great cooking thermometer is the ThermoPop which is a more basic version that works just as well!

How to make buttermilk with regular milk
Don’t have buttermilk in your fridge? No problem! All you have to do to make buttermilk is add a little bit of lemon juice or white vinegar to regular milk. Any variety of milk will work but 2% or whole milk work the best. Just add 1 Tbsp of lemon juice or vinegar to each cup of milk and then let it sit for about 5-10 minutes until the milk has thickened a little bit.
