The great part of these no bake apple caramel cheesecakes is that you only need about 8 ingredients and a few minutes of prep to pull these mini cheesecakes together. The two hours of waiting for the cheesecakes to chill are what is needed to get the perfect consistency and texture, so these sweets are definitely worth the wait.
Because these no bake cheesecakes contain no egg in the recipe they do not require the extra steps that typically go into making cheesecake. That means you do not have to wait as long to enjoy these scrumptious treats!
No Bake Caramel Apple Cheesecake Ingredients
-Graham crackers: You will need ¾ cups of crushed graham crackers, they will be divided. Alternatively, you can use Nilla wafers if you prefer those over graham crackers.
-Butter: Use 3 tablespoons of melted butter to help bind the crumbs together for a nice strong crust.
-Cream cheese: You will need one 8 ounce package of softened cream cheese to make the filling.
-Instant pudding: Use a 5.1-ounce size box of instant pudding. The caramel flavor is preferred for this recipe but you can use vanilla or butterscotch if you cannot find the caramel flavor.
-Milk: Use 1 cup of milk to dissolve the sugar in the pudding mix & help get the pudding to a creamy consistency before adding to the filling.
-Whipped topping: You will also need 8 ounces of whipped topping to make the cheesecake filling fluffy and light.
-Caramel syrup: Use ½ cup of caramel syrup to add just the right amount of caramel flavor to every mini cheesecake.
-Apple Pie Filling: Use a can of apple pie filling or some cooled filling if you have made it from scratch.
-Optional Toppings: Some ideas for optional toppings include Cool Whip, pecans, graham cracker crumbs, or apple wedges.
Step by step on how to make Caramel Cheesecakes with Apples
Prepare the crust
For this recipe we are preparing mini cheesecakes using a pan with smaller singular serving size portions. You can also make these in a cupcake pan for many small cheesecakes.
First we start with the crust. Mix together the graham cracker crumbs and melted butter in a bowl until well incorporated and then divide it between the 6 serving dishes evenly.
Place the dishes with the pie crust into the freezer while you proceed with the remaining ingredients.
Prepare the filling
In a medium sized bowl, whisk together the pudding mix and the milk and let sit for 5 minutes.
Once the pudding has had a few minutes to set, add in the softened cream cheese and mix well to combine.
Proceed to fold in the whipped topping until all is well combined.
Assembling the desserts
Remove the crust-filled pans from the freezer and start by placing a few dollops of the cream cheese filling into each one. Be careful to not overfill, leave room for the apple pie filling.
Then add a spoonful of apple pie filling and then a drizzle of caramel. Repeat each of the layers for a double shot of apple pie filling and caramel drizzle.

Instructions
- Mix the graham cracker crumbs and melted butter until they're well incorporated. Divide between your preferred serving dishes evenly. Place the dishes in the freezer.
- Whisk together the instant pudding mix and milk in a medium-sized bowl. Let the mix sit for 5 minutes.
- Once the pudding has sat, add the softened cream cheese and mix well. Fold in your whipped topping until all is well combined.
- Remove your crust dishes from the freezer and spoon a couple dollops of cream cheese mixture into each serving dish. Top with a spoonful of apple pie filling, then a drizzle of caramel. Repeat each layer.

How long are no-bake cheesecakes good for?
These mini cheesecakes can last up to 4 days if kept well covered and stores in the fridge. I recommend eating them within 2 days for the best results. Also, they are so delicious chances are they will not last long anyway!
Why is my no-bake cheesecake not firm?
The firming up happens when the cheesecake has chilled for an appropriate amount of time. Usually, this is after about 6 to 8 hours or a larger cheesecake. These mini cheesecakes can reach that after less time due to their size. As tempting as it is to eat them right away, waiting for the cheesecakes to firm up in the fridge means waiting a few hours after prepping them. Can I put my no bake cheesecake in the freezer to set faster?
